CEimB: 5 Layer Mexican Dip

Oh yeah.  Good recipe for a football Sunday. I was watching the game and making the dip – on the sofa, off the sofa, on the sofa, off the sofa. I didn’t cook anything except to heat the corn which is not quite how this recipe goes.   This weeks recipe pick was the wonderful choice of Heather from The Mama Cooks .  Make sure to click on over there to see how this delicious recipe is actually made.  It can also be found on line at this link:  The FoodNetwork. My ingredients were:   Differences from original recipe in red.  1 [...]

CEimB: Easy Chicken-Mushroom… Quesadillas?

This weeks recipe was chosen by Marthe of Culinairy Delights.  There was so much flavor in this dish.  The warm flavors of cumin and chile powder mixed with oregano was unique and married perfectly.  You’ll soon be wondering, as you look at the photos, what the heak I made.  You’ll think ..”THOSE aren’t Quesadillas!!!”.   You will be SO right. We have been enjoying so much bread and wraps lately, I couldn’t bring myself to serve up another dinner dish using tortillas. I decided to serve the main ingredients in lettuce leaves.  Hence:  Easy Chicken-Mushroom Lettuce Wraps. Ted helped prepare the [...]

CEimB: Tuscan Vegetable Soup

What a great time of year for soup!  This vegetable soup was made for Fall, so warming and rich with the flavors of herbs and white beans for texture.  It’s even more appealing because it’s so easy.  Thanks to Pam of Lobster and Fishsticks, this was another Ellie Krieger hit in our home. The recipe can be found HERE on the FoodNetwork. Click the link for Pam’s blog to see if she made any interesting changes to the recipe. My changes were as follows: Instead of 4 cups Vegetable Broth, I reduced it for a thicker soup and used about [...]

CEimB: Chicken or Tofu Chop Suey

On page 207 of “The Food You Crave” by Ellie Krieger is this delightful recipe for Chicken Chop Suey. The Tofu is my vegetarian version.  It was a very satisfying meal for both of us at Apple Crumbles. The recipe was chosen by The Healthy Hostess.   It was a good choice.  If you don’t have the book, referenced above, but you would like to try this recipe, go to The Healthy Hostess' site or the FoodNetwork . I made a few changes to the recipe.  It all began in the grocery store when I forgot to look for the wonton [...]

CEimB: Sweet and Spicy Grilled Cheese Sandwiches

This week’s Craving Ellie recipe was the choice of from Leslie of  Lethally Delicious.  Her site is a must see.  The recipe can be found on page 95 of “The Food We Crave” by Ellie Krieger or HERE at food network. Since we are making sandwiches, the best place to start is with the bread.  My choice was Double Protein Bread.  It’s a multi grain bread but with more protein than standard wheat breads. The calories might be a bit higher, 110 per slice, but with a sandwich, the bread needs to stand out.  The cheese I changed to horseradish jack.  [...]

CEimB: Pulled BBQ Chicken (Quorn) Sandwiches

This week Pamela of Cookies with Boys hosts our weekly recipe with Craving Ellie In My Belly group.  The recipe is Pulled BBQ Chicken Sandwiches right off the web so you can click the link and make this one your self.  It's good and it's easy.  Not much cooking,  just mixing for this recipe.  Naturally, I had to find a chicken substitute and it was once again that old faithful "Quorn".  I had Ted and Teddy set up their own plates for photos.   I take no credit for the cosmetic success/failure of the following:   Ted said "How did [...]
