Running Mistake and Picnic Pasta with Pine Nuts

My running speed sessions typically fall on a Tuesday and early in the morning as all my training runs typically do.  If you keep up with good training habits, you know that eating just a little something about 30 to 60 minutes before heading out is a healthy habit.  This is especially important if running for over an hour, in hot weather, AND doing a hard workout. Whole Wheat Spaghetti with Mint Pesto and Zucchini Ribbons

The cooking range is finally installed in my kitchen.  Still no counter tops but a desperate cook can work around that and so I did.  Based on a recipe from “Every Day with Rachael Ray”, I was able to use more fresh picked mint from the garden.  This is a vibrant pasta dish with fresh, summer flavors.  Even though we are still eating on paper plates, we enjoyed this mint-lemon whole grain pasta dish, knowing it was wholesome and pure because we picked it (well,the mint anyway) ourselves. Pizza Party: Parma Ham Pizza PLUS A Dessert Pizza

Starting with Parma Ham Pizza..with 2 cheeses, pear and caramelized onion. This pizza is the creation of Chef Patrick Nuti of ROC, New York.  Chef Nuti? –AWESOME-!
