FOFF Dressed Up Chicken

When work is especially busy and the days seem so short with all the chores that have to be done, cooking a big meal on the weekend isn’t always a pleasure.  It’s those weekends when I just want to put my feet up that we go in search of “meals in minutes”.   The following recipe by Carla Vavala turned out to be just what we needed last Sunday.  Ted was able to enjoy a hearty dish of chicken, stuffing and potatoes, while I simply reheated some homemade vegetable soup.  Both of us were happy. Dressed up Chicken This recipe found in [...]

FOFF Baked Chicken or Vegetarian Option with Capers

Really rotten run this morning.  BLAH! It was the first run with snow covered sidewalks, slush in the road and a slippery surface from the winter weather.  It was a run laden with several stops because of Shane, because of winter running pants falling down, and finally, because of Zoey.  I didn't stop the Garmin everytime we took a "time-out" which is why I didn't even run 6 miles in an hour.  Came close but not quite the goal. I don't like having bad runs like those that the winter weather can cause.  It feels as if I didn't even [...]

FOFF Balsamic Chicken or Tofu

First of all, hope everyone who celebrated Thanksgiving had a WONDERFUL day!  Ted and I enjoyed our day with Pam and Heman in sunny, warm Florida.  It sure will be tough going back to the 20 degree temperatures in New York. Second, after you have used up all your left overs in various left over recipes, you will want to try this delicious dish from Fusion of Food and Friends. I love balsamic vinegar. In fact, there is nothing fancy about my salads except a good quality balsamic vinegar and extra virgin olive oil.  I was looking forward to the [...]

FOFF Chicken or Tuna Wellington

Shane has a new friend. He likes Mr. Gorilla because every time it squeaks, Zoey runs away.  Shane! He’s such a guy! Chicken or Tuna Wellington – made easy. We’re entering another chapter of our book Fusion of Food and Friends by Carla Vavala.  This chapter is Chicken and Turkey.  Since I don’t eat either one, the recipe reviews will be coming from Ted unless I incorporate a vegetarian substitute as I did in this one.  I used tuna for me and chicken for Ted.  You will need…. 2 sheets of puff pastry *found in the freezer section at the [...]

Cold Running and FOFF Spaghetti Squash Au Gratin

The mornings have been colder, not wet, not windy, just cold.  It’s hard getting used to running in the cold and knowing what to wear so as not to get too hot and have to carry half your clothing in your hands or around your waist.  Legs don’t seem to be a problem, I wear capris at 45 to 50 degrees and cool weather running tights in colder weather.  It’s just the upper body that seems to be the challenge.  This week it has been in the high 20’s to mid 30’s  My hands seem to be the upset this [...]
