When work is especially busy and the days seem so short with all the chores that have to be done, cooking a big meal on the weekend isn’t always a pleasure.  It’s those weekends when I just want to put my feet up that we go in search of “meals in minutes”.   The following recipe by Carla Vavala turned out to be just what we needed last Sunday. 

Ted was able to enjoy a hearty dish of chicken,stuffing and potatoes, while I simply reheated some homemade vegetable soup.  Both of us were happy.

Dressed up Chicken

This recipe found in Carla Vavala’s book Fusion of Food and Friends on page 61 was originally created by Peachy "Mom" Vavala. It’s easy and can be made by anyone, even those who profess they cannot cook.

Ted made his own dinner using this recipe.

4 boneless, skinless chicken breasts

1 plastic oven bag

1 jar of chicken gravy

1 box of stuffing mix

Preheat the oven to 350 F.

Place the oven bag in a 9 x 13 baking pan. Lay the breasts in a single layer inside the bag.

Mix the stuffing mix according to the package directions and allow to cool. Place the stuffing evenly on top of each breast.

Pour the gravy over the top and tie up the bag with the tie included.

Bake for 1 to 1 1/2 hours. Serve with mashed potatoes or rice.

Who wouldn’t love the simplicity and flavor of this meal?! No effort. Just enjoyment.

*Ted said he didn’t salt and pepper the chicken before placing in the bag but then again, it didn’t need it. You’ll find jar gravy and boxed stuffing is very well seasoned and especially salty. The flavor will transfer to the chicken.

Served on top of mashed gourmet Yukon Gold potatoes.
