Grilled Salmon with Sweet Corn and Plum Tomato Salsa, Sweet Potato Wedges, and Green Pepper Vinaigrette

It’s hard to believe we’re in Utica with the forecast predicting so many days of sun.  I don’t know how the folks around here are going to deal with it?  All that vitamin D, all that happiness, it’s going to ruin our upstate reputation!  Recipe time… Eat Fish. Feel Good (not grumpy). Let’s face it, when you eat a lot of fish like Ted and I do, the quick way to prepare it gets old. Guess that’s the way it is with any food you eat on a regular basis.  Even though you enjoy it, you eventually want something different.  [...]

Asian Inspired Grilled Tuna with Fresh Watermelon over Field Greens

A few things to catch you up on my life before getting to the recipe. Bet you can’t wait!  First, we just returned from an exciting (in more ways than one, good and bad) trip to South Carolina. We stayed with Mom and Dad and spent a day and a half with Pam and Heman to celebrate Pam’s birthday.  Pam is a Health Counselor for clean and healthy living. Check her out HERE! We took the dogs and enjoyed, unfortunately, only one hour at the beach.  We were busy the entire trip and before we knew it, had to eek [...]

Scallops with Nori Butter and Dill

The two main features in this recipe, the scallops and the nori,  Nori enhances the sweetness of the scallops.  Make sure to present the entree in a way where the scallops cannot be eaten without the nori.  Ignore any complaints about eating green food! … and what ever you do, don’t tell them it’s healthy. Note: I used Smart Balance Healthy Blend plus a little olive oil to replace the butter. 3 toasted nori sheets 1/2 cup unsalted butter - or substitute with your favorite healthier alternative to butter 1 1/2 TBS of chopped fresh dill salt to taste 1 [...]

Gluten Free Peach Cherry Grilled Shrimp in Cabbage Wraps

Keep this recipe gluten free by using cabbage or lettuce as a wrap for grilled shrimp in a delightfully fruity, slightly spicy glaze.  If you don’t follow a gluten free diet, this recipe would be terrific with regular yellow corn taco shells. Serves 4 1 large head of cabbage:  Gently remove 4 large leaves, wash and put in a large pot of water. Cut cabbage in half and separate more leaves, almost down to the core. Fill pot half full with water, bring to a boil and cook over a boil for 6 – 8 minutes. Remove from heat and [...]

Forgiveness and Baked Tuna “Meat”balls

From “The Book of Forgiving” by Desmond Tutu and Mpho Tutu: …the only way to experience healing and peace is to forgive. …Until we can forgive the person who harmed us, that person will hold the keys to our happiness; that person will be our jailor. …When we forgive, we take back control of our own fate and our feelings. …We don’t forgive to help the other person.  We don’t forgive for others. We forgive for ourselves. Have you ever been so obsessed about how someone hurt you/your feelings that it becomes the main focus of thought all day?    There [...]

Dukes Tacoma Washington Special Recipes

Still in recovery mode.  The alarm is set the previous evening.  In the morning, when it sounds it’s ugly alert, the ears tune in to any rain or wind that might be going on outside.  If either one is heard, the body turns over, the eyes close and it’s another hour in bed.   So nice! There are a few motivators to put the body in motion:  1. The dogs.  They protest sleeping in and their protests are difficult to ignore. 2. Ted is hard core training for his upcoming triathlons. He gets out of bed by 4:30 am.  This can [...]
