According to altiusdirectory.com, “there are three particular days to celebrate Chocolate Day. First Chocolate Day is on July 7th and US National Chocolate Day is on October 28th. The third and the most famous is World Chocolate Day, which is celebrated on September 4th.” The site also suggests chocolate is good for the heart, blood pressure, the brain, etc. and that’s enough of an excuse for me to play with chocolate in my kitchen.
The Chocolate Cookie Experiment
While tapering for a marathon, the body has all this extra energy and if you don’t want to use it cleaning the house or doing other worthwhile chores, you can use it to conduct baking experiments in your kitchen. For example, this post offers an experiment in making cookies using one bowl and very few instructions. The best part is that the cookies turned out so good, I’m giving myself a huge pat on the back.
Try this one. You’ll love the results! And chocolate is good for you
Makes 2 dozen cookies
- 2 cups flour
- 1 tsp baking soda
- 1 1/2 cups coconut sugar – a healthier alternative to granulated sugar
- 1/4 cup coconut oil
- 1/4 cup peanut butter – don’t like peanut butter? Use another 1/4 cup coconut oil
- 1 egg
- 1 tsp vanilla extract
- 2 TBS chocolate syrup
- 2 TBS water
- 1/3 cup chocolate pieces
Preheat the oven to 350 F. Line a baking sheet with non – stick foil.
In a standing mixer bowl, blend the four, soda, sugar. Add the coconut and peanut butter plus the egg, vanilla, chocolate syrup and water. Once all that is mixed, stir in the chocolate pieces.
Drop by tablespoons onto the prepared baking sheet and bake for 15 – 18 minutes. They will have a nice little crack in the top when done.
Enjoy with a hot cup of your favorite tea.
