Gym-mania today: 50 minute treadmill run + 45 minutes of weights working chest and arms. Shane and I went running around the golf course for 4.5 miles. Total running miles today= 10.01 at an average pace of approximately 9.3.
I really love this time of year. It was 50 degrees so shorts and a light running jacket was perfect for an early morning run. At 5:30, it was just beginning to get light out which meant we had so many more running route options. That’s why we were able to go up into the golf course. Any earlier in the year, it would be pitch black and super creepy up there. Beautiful morning.
Since I have a doctors apt. this morning, I’m not going into work until about 9:30 am. Can’t stand doctors, nothing personal, it’s just such an inconvenience to go and find out nothings wrong. It would be worse to find out something IS wrong but the whole appointment thing upsets my daily routine. Still, I go every year just for peace of mind. The same goes for dentists but I see my dentist every 6 months. I think I prefer going to the dentist

Last minute, quick and easy, tasty and fresh dessert treat.
I had the urge to bake and my sweet tooth was acting up. As much as I would have liked to inhale a large box of “Milk Duds”, the mental aberrations to follow would have caused too much distress. I grabbed the box of Fillo Dough (also knows as phyllo) from the freezer, stared at it for a moment…with the freezer door open (shame on me), looked up and saw frozen strawberries. It hit me! I would make a strawberry fillo dough tart.
I always keep a box of puff pastry and fillo dough in the freezer should a last minute gathering occur. These items make last minute desserts a breeze. You can actually simply bake then add ice cream or pudding to them for the most basic of sweet treats. Drizzle a little chocolate sauce or fruit sauce on top and everyone thinks you put hours of work into a fantastic dessert.
Strawberries and Fillo Dough – this will serve 12. Because I only use 1/2 a fillo sheet, you might want to double the recipe or simply put the unused dough back in the freezer for future use.
- 24 half sheets of fillo dough
- 1/2 to 3/4 stick of “Heart Healthy” margarine such as Promise – Melted. *can use butter if you like.
- 24 frozen strawberries – cut off the stems and microwave for 2 minutes. Drain juice. Add 1 TBS cornstarch and stir around. You chop the largest strawberries. NOTE: If you use FRESH strawberries, don’t microwave and don’t use cornstarch.
- Cinnamon to taste *You could sub. with cocoa powder if you don’t like cinnamon
- honey to taste
Preheat oven to 375 F. For the least amount of mess, spray a large aluminum pie tin with non stick baking spray.
Place a sheet of fillo dough in the tin and brush with melted margarine. Top with another sheet of dough. Repeat for a total of 3 sheets. After the 3rd sheet, brush with margarine AND drizzle with a little honey in a zig – zag pattern on the dough. Sprinkle with cinnamon. *NOTE: If you don’t like cinnamon, sprinkle cocoa powder.
Add 3 more sheets of dough as you did above, brushing with margarine in between. After the 6th sheet of dough, add the strawberries with a slotted spoon. You don’t want a lot of juice. Drizzle with just a little honey to cover each strawberry, sprinkle with cinnamon or cocoa and begin again with the fillo dough. 3 sheets, margarine in between, honey drizzle after 3rd. 3 sheets and end with margarine and cinnamon on top.
Bake for 15 – 16 minutes. Turn off the oven and leave in for 30 – 45 minutes. Should be nice and brown by this point. Remove and let cool.

We didn’t have health insurance for a long time, so doctor visits and lab work is just too much money. I finally got some insurance through my work and did the whole shebang last year with mammo, lab work, and the like. It still cost me $400 out of pocket for all that. It’s crazy. I don’t go unless something is really bad. Now the dentist, I am very faithful twice a year on that.

Great job on the workout!! I love it that it gets lighter earlier because it gives me more time to run in the morning. If I don’t wake up for my run in the morning I have to run in the afternoon, and last time that happened the heat was terrible! Florida weather is nowhere near the 50’s 🙁

It must be getting pretty hot in FL. Actually, I have to train in the heat (if it ever comes to NY) for summer running events. I can’t stand running in heat but this year, I’m willing to suck it up.

Know what you mean. I actually don’t visit a family doctor I just go to the Ob/Gyn and ask that he does all the other stuff. It’s just such a thrill 🙁

I HATE going to the doctor! I didn’t have health insurance for a year and I had to go to the emergency room (thought I had a appendicitis but had Kidney stones) and my bill was $12,000. I still have nightmares about it.

I usually make an appointment with my doctor once a year and it feels that it comes way too soon every time 😀 it’s not that I don’t like my doctor but as you I feel it’s waste of time to go and be told that nothing is wrong, but I wouldn’t dare not to make an appointment every year anyway 😀
