CEimB Zucchini Roll ups

Officially, “CEimB Grilled Zucchini Roll-Ups with Herbs and Cheese” is this weeks Ellie Krieger recipe chosen by Liz at MyTableTheirTable.  Great job Liz. Both Ted and I enjoyed the flavors of this recipe and Ted isn’t even a fan of goat cheese. Amazing!

I know YOU know that I made adjustments.  Joanne can’t leave anything alone.

1. I added a few chopped grape tomatoes mixed in with the cheese, lemon, and parsley.

2. I grilled the zucchini on the stove top and added just a few drops of Liquid Smoke to the oil which gave the zucchini that “grilled outside” taste.

The roll ups were served luke warm.  It’s a texture thing. There was no way I could have eaten the zucchini cold.  Consequently, the cheese mixture melted a bit but did stay inside the roll ups.  I let them cool slightly before putting the cheese on them.

What a great appetizer!  What a super party dish!  This will most likely make an appearance at our next friendly get-together.

We ate our warmish too, right after I made them, instead of chilling them. So good!

These look fantastic. And like child repellents. Put them next to the alcohol at the party, and the kids will steer clear of both.

My favorite ingredient for smoky flavor is smoked paprika. Liquid smoke, even in small doses, is so heavy-handed; it has that laboratory jelly belly aura about it. You should try it some time and see if you like it.

I didn’t think Ted would eat them due to the goat cheese, but he did and, although he didn’t do any huge leaps into the air, he said they were good.

These do look super yummy! I think I would serve them on a warming plate so they would not get cold.
