Should Have Run a Marathon and Energy Meal Cookie

CNYEats A Taste of Utica Italian Chocolate Cookies

Saturday I ran my longest long run before Air Force Marathon on September 15th.  It was 22 miles in perfect weather without any major aches or pains.  Shane and I ran a slow 6 miles to start the morning then I continued on, incorporating some hefty inclines in my run.  The steepest part of the hills turned into a run/walk effort. 22.02 miles with a moving pace of 9:58.  Slow but within my training pace range.  I had to stop on Sessions Road. CNYEats A Taste of Utica Banana Dream Cookies

Since I’ll be running a half marathon Sunday, this week’s A Taste of Utica recipe is on hold. CNYEats A Taste of Utica Macaroon Cookies

Posted by Toni (Leone) Guzski and found on page 157 of our book A Taste of Utica, is a gluten free (there’s no flour to worry about!), delicious little delight called a Macaroon cookie. Makes 3 dozen 1/2 cup almond paste 2 cups confectioners sugar 1/2 cup of egg whites 5 cups flaked coconut 1 tsp. vanilla extract 3 dozen Maraschino cherry halves Blend the almond paste with the sugar until it reaches an even texture. Running Blind and Peanut Butter Cookies
