Talk about refreshing! I thought it might be too early in the season for this recipe. That wasn’t the case. Cold weather or hot weather, this works. Sweet but fresh. Your mouth explodes with the cool, clean flavor of frozen lemon ice.
By the way, I’m struggling with my new photo software. It’s taking me forever to figure out what it does with my photos not to mention any editing. Patience…I’ll get there.
The recipe is simple. 4 ingredients and enough lemon delight to share among 8 – 10 people.

- 4 cups hot water
- 2 cups granulated sugar
- 1 tsp. Knox gelatin (use Agar as a vegetarian alternative)
- lemon juice to your taste (I used the juice and zest from 2 large lemons, saving the third for any finishing touches)
Boil water and sugar and keep stirring. In a bowl dissolve gelatin with 2 TBS of water. Stir well. Add the two mixtures together and let cool. Add the lemon juice and stir. Put into a container and freeze but you must stir until frozen. *The best bet is to use an ice cream machine. Simply chill the mix for 1 hour then pour into the frozen ice maker contain and set the ice cream maker on for 20 minutes. Put into the freezer for further chilling, about 2 – 3 hours.
This is seriously refreshing. It’s a palate cleanser for sure. It’s a must to make. No fat, just sugar. Get happy, get on a sugar high .
