It’s going to be a hot one on Saturday for Ted’s THIRD triathlon event. The Owasco Man.
Ted’s ready and looking forward to another day of swimming, biking, and running. Well…not so much the running but it’s all part of the game, right?!
We were going to take Zoey and expose her to more wonderful people, places, and activities but it turns out the park won’t allow dogs on the triathlon side. At least we don’t think they will and due to the heat, we don’t want to take any chances. So Zoey will experience her first full morning of home “doggy” care. We have Peacheroo (Donna and Sherri) come to the house to spend time with Shane and Zoey. It’s nice to have people you can trust to take care of your loved ones.
It’s going to be HOT like I said. We’ll be coming home to this delicious homemade ice cream and believe me, after a triathlon, I’m sure there will be a hefty dent made in this dessert.
A Berry Delicious Ice Cream (with crispy grahams) – and super for the Fourth of July!
The creamy, sweetness of Italian mascarpone cheese with rich, thick milk and cream plus zesty lemon, crispy graham crackers and fresh berries bursting with flavor makes this homemade ice cream a real treat for your taste buds.
A super way to celebrate the warm days of summer AND with July 4th rolling around, the colors suit the mood of the season.
- 8 oz mascarpone cheese
- 14 oz can sweetened condensed milk
- 1/3 cup whole milk
- 1/4 cup whipping cream (heavy cream)
- 2 tsp lemon zest
- 1 cup fresh RED strawberries chopped small
- 1 cup fresh BLUE blueberries washed and stems removed
- 3 full graham crackers, chopped
Beat the cheese, sweetened condensed milk, whole milk, cream and lemon zest. Beat the mix your electric mixer for about 5 minutes.
Stir in the berries and chopped crackers. Freeze for about 3 – 4 hours,
if too frosty-frozen, allow to sit for 15 minutes before serving.
Ooohh! Those graham crackers add so much to this “berry delicious” dessert.
Top it off with a little sprig of mint and VOILA! – Perfection!
