This weeks A Taste of Utica recipe is posted by Chris. Not a BLT Sandwich but a BLT SALAD.
I’ve listed the original ingredients however, I didn’t use real bacon. I used Soy Bacon. Still…this recipe is a winner.
- 3/4 cup mayonnaise
- 4, 1 inch thick slices of Italian Bread
- 12 slices of thick – cut bacon, chopped
- 3 TBS red wine vinegar
- 4 cups cherry tomatoes, halved
- 1 (10 oz ) bag of chopped romaine lettuce
- salt and pepper
Adjust oven rack to middle position and heat oven to 475 F. Spread 1/4 cup of mayonnaise evenly over both sides of the bread and transfer to a baking sheet. Bake until golden, about 3 to 4 minutes per side. Let cool 5 minutes and then cut into 1 inch croutons.
Cook the bacon pieces in a large skillet over medium heat until crisp, about 8 minutes. Transfer to a paper towel lined plate. Discard drippings.
Whisk remaining mayonnaise and vinegar in a large bowl. (Apple Crumbles used 3 TBS Mayo + 1/3 cup 0% fat Greek Style Yogurt)
Add the bacon, tomatoes, lettuce, and croutons. Toss to combine. Season with salt and pepper. Serve.
So simple. So good. Who would guess?!
Terrific for an easy Sunday night light but filling and tasty meal.
That first picture is fantastic!
This dish looks like something from a high scale restaurant – beautiful!
That looks yummy. I know DH and DD would love that….I will have to try it! Thanks!
I am all about the soy bacon…this looks like a nice, refreshing summer meal. Just what I need in this hot Texas heat!
Exactly my kind of salad!
