Snow White Lamb and Desserts To Share

What’s that little quip?  “In like a lion, out like a lamb”.  Does that mean a snowy white lamb because if so, it’s here!  We certainly had fierce gales but what about the gentle breezes?Right now, we’re still suffering 22 mph winds which is still a fierce gale.  But that’s not the end of Spring’s little joke.  We had pelting rain and a white out snow storm.  So much for the transition from winter to spring and so much for one of my last speed sessions before the marathon.  Last weekend, I was excited because I could finally use the [...]

Cut the Sugar and Apple Fruit Chewies

I'm going to confuse you. First, I'll tell you to watch out for sugar in your diet THEN I'm going to give you an awesome recipe that has sugar in it.  Point being:  Be aware of sugar and what harm it can do to your healthy aspirations but don't forget to give yourself a little slack now and then.  A common question: Will I get fat if I eat sugar?  An easy answer:  No, not unless you eat it in excess but then again, if you eat ANYTHING in excess it’s not healthy. Healthy diet planning should focus on fiber-rich fruits, [...]

CNYEats A Taste of Utica Cannoli Shells and Filling

If you live in upstate New York you know all about Cannoli.  That wonderful dessert in a crisp, delicate shell that houses a creamy, rich filling of ricotta sweetened cheese.  The only thing better than a cannoli from your favorite bakery or restaurant is one you made at home.  The cannoli shell is typically fried.  I don’t enjoy frying because it’s messy.  I love baking and cooking but I don’t love clean up.  If there is a way to avoid it, I’ll take it.  Creativity was put to work when I decided to make the cannoli but there was no [...]

CNYEats A Taste of Utica Black-Bottom Cupcakes

Cupcakes! Mmmmm!  These are the perfect party cupcakes.  You know how brownies always get eaten up quickly at picnics and parties?  Well these cupcakes are going to disappear just as fast as a moist, chewy, chocolaty brownie. Were we speaking of parties? Oh yeah…. Ted and I went to a beautiful wedding this weekend. The reception was held at the Stanley where there was delicious food catered by Danielle’s, fun music, lots of dancing, and of course the most engaging conversations with friends. Unfortunately Shane and Zoey couldn’t go but they enjoyed the photo shoot. Eat CUPCAKES…. Perfect for parties [...]

Party Time and 4 Ingredient Spiced Pumpkin Muffins

We’re going to a neighborhood holiday party tonight.  It’s always fun to catch up on who is who and what is what and just be generally nosey and spread gossip. Last night Ted said to me “Are you going to wear something low cut, tight and sexy? Because, you KNOW, the competition is ON!”   He is talking of course about the last time we attended this particular party and a local judge (no names) wore a dress that was cut to her belly button.  The shorter men were walking around with foot stools so they would be of an advantageous [...]

De-Funkify and Apple Blondies

I’ve been in a funk lately.  The winter weather moved in way too quickly for my liking and it’s getting me down.  Serious disagreements, deaths, body hurts, very “blue” rather than “rosy red” mood all have finally taken their toll.    “Tis the season to be jolly”,  a celebratory season, festivities, parties, and yet there is some bad air around.  Well, it’s time to de-funkify and so goes forth the mission.  Here’s how I try to get out of a funk:  Realize I can’t fix things beyond my control and  worry won’t solve anything. Move forward. Fix things that I CAN [...]
