New York Apple Muffins

This morning I ran with Zoey for 6 miles.  It felt good. The weather was cool, 36 degrees very little wind and the sun was just peaking over the horizon.  Six miles is a good distance.  It feels healthy, just enough to get the heart pumping and do-able under an hour. Nice! I’m in taper mode for the Marine Corp Marathon next weekend.  I only hope the weather is just as perfect as this morning but what ever nature throws my way, I’ll get through it.  One day my mind is in “just enjoy it, take your time, anything under [...]

Pumpkin Craisin Nut Muffins

We’re quickly approaching the holidays.  Are you noticing all the headlines regarding controlling your diet through the tempting tables of the holiday season?  Surely one party here or there can’t hurt.  It seems to me that what’s written in between the lines of those diet recommendations is simply “don’t let your healthy diet regimen get away from you.”  We need to allow ourselves a splurge now and then otherwise such strict restrictions are self defeating.  That’s my take on holiday eating anyway.  I should mention that with the extra calories, there is still NO EXCUSE not to exercise since you’ll [...]

Peanut Butter-Strawberry Kissed Cupcakes

After Ted’s last Triathlon for 2014, we celebrated with some delicious “kissed” cupcakes. But first, the endurance event put on by ATCEndurance.  Start time was 7:50 am for a 800 meter swim, cut down from 1000 meters, not sure why.     Good swim with a few kicks here and there.  It seems with the reconfigured course, swimmers were getting in the way of each other more than usual. OR, maybe they were just in Ted’s way more than usual?? On to the bike.  It was cold so our athlete dressed for a chilly 18 mile ride. The bike went as [...]

Foot Issue and Cocoa Muffins with Quinoa

A week ago pain shot through my foot and almost brought me to the ground. I thought my 4th run at Boston wasn’t meant to be. It was an on-off pain, migrating to different areas of my foot. Not typical of plantar fasciitis, maybe a little like tenosynovitis, couldn’t be a stress fracture unless you consider how I have taken advantage of my feet through 11 marathons within 3 years.  After a meeting with the podiatrist and 6 x-rays, there is a tiny bone spur in my heel (but don’t we all have those?!) and go-ahead to run Boston BUT… [...]

Bouchon: Banana Muffins

First, a weekend wrap up. Saturday started with an enjoyable 8 mile run with first, Zoey, finishing with Shane. The weather wasn’t too bad but I have to admit, it’s tough getting used to the colder mornings. After a little pre-muffin prep (the recipe below requires batter preparation a day ahead of baking), Ted and took Saturday afternoon for sofa hunting. We found two sectionals we liked but after some internet research, discovered neither one was the quality we wanted. All that sitting and rising, testing one sofa then another is a workout in itself! Not enjoyable at all! Sunday [...]

The Herd and Banana-Nut Goat Cheese Muffins

There must be an advertisement written in “deer tongue” somewhere close by: “Calling all deer!  Come to our yard! It’s the perfect vacation spot for the entire family herd. Graze peacefully under the trees. Bask in the sun while watching the little ones play. Take a dip in the creek then have mom clean you off,  creek side. Come and go as you please because the dogs only watch No barking, a quiet haven. So come to our home, all you deer.  Why bother taking a hike up to the Adirondacks where there might be more food, more water, more [...]
