CNYEats A Taste of Utica Hj’s Chocolate Chip Family Recipe

It was going to be a beautiful day for a run as long as you could wait until after about 10 am.  I’m impatient and want to get my workout over in the early AM so I couldn’t wait.  It was too cold to do my long run outside at 6 am with temperatures at 2 degrees.  I grabbed water, a couple of gels, put the fan on, turn the T.V. to Law & Order and ran for 14 1/4 miles on the treadmill.  Finished outside for 4 miles with Shane and Zoey then made good use of the snow [...]

CNYEats A Taste of Utica Placek (Plum Cake)

This recipe is posted by Chris and found on page 199 of our book A Taste of Utica.  There’s a catch:  I couldn’t get Italian plums and although the recipe suggests substituting apples, I had an over supply of peaches so I substituted peaches.   The result?  OMG! Yes, that over used acronym but well suited in this case.  See why…. Serves 12 – 14, (1) 9 x 13 pan depending on how you cut it. 3 cups flour 2 sticks unsalted butter 1 cup sugar 5 egg yolks (*I used 4) – AND, save the whites for use later in [...]

CNYEats A Taste of Utica Speculatius Cookies

It was a surprise to find this recipe in our Utica book, A Taste of Utica since the origin of the cookie is believed to be Holland or The Netherlands. From The German Food Guide: History There are two theories about where the name Spekulatius originated. The first theory states that the name came from the Latin word Speculum, meaning "mirror." It refers to the wooden cookie mold that imparts its design onto the cookie. The second theory states that the name comes from the Latin word Speculator, meaning "bishop", "overseer", or "supervisor." The connection here is that Speculatius and [...]

CNYEats A Taste of Utica Strufoli (Honey Balls)

It’s well after the holiday season and the desire to make cookies has finally returned, but not for “best if eaten same day” type cookies.  We don’t like that kind of pressure around here.  After all,  our freezer has barely recovered from all the holiday stash we accumulated. The Strufoli, or honey ball cookie is a classic Christmas treat.  Since that holiday has come and gone, I decided to turn this recipe into more of a pancake and so embarked on a different honey ball mission.  Honey balls are best eaten the same day otherwise they get hard.  Try my [...]

CNYEats A Taste of Utica Pineapple (and cherry) Squares

This week we should have baked up a local favorite cookie called Almond Paste Cookies posted by Angela and found on page 197 of our book A Taste of Utica, but I posted a similar recipe before So this week I made Pineapple Squares instead.  From Marie Carbone and posted by Rainie Piccione. Page 198 of A Taste of Utica. This recipe was really confusing. There was vanilla to add in the directions but no vanilla listed in the ingredients.  Eggs were listed twice in the ingredients but only 2 were used in the directions.  It was very confusing and [...]
