*For vegetarians, make sure you pick up vegan friendly marshmallows.

  • Place in a double boiler:  1/4 lb mini marshmallows, 6 TBS powdered sugar and 1 1/2 cups heavy or lite cream.
  • Remove from heat once the marshmallows are melted and add:  1 large banana *I USED CHOPPED PEACHES, 1 small bottle of cherries – cut up *I USED OREGON CANNED CHERRIES In heavy syrup but drained, 1 TBS melted mint chocolate, 1 TBS chopped almonds.

Mix all the above together and freeze.

      Ahhh spumoni! I’ve seen random pictures and have heard of it but I never knew what was in it. For some reason, I always thought it was cotton candy type ice cream. This looks a lot better than that.

      I have fantastic Valentine’s Day plans: will be sitting in class all. night. long. On the plus side, that makes Ben happy because he won’t have to do anything special. Ha ha (he gets off so easy!). 🙂
