What’s been going on with the exercise? We have still be running and lifting weights. The same schedule: Monday – Friday 30 minutes of Aerobics. 25 – 30 minutes of weights. 35 – 50 minutes outside aerobics with Shane. With all that exercise, one needs some time off once and a while. The holidays are approaching and that’s when time off is taken. I can’t WAIT! Next week, I will get a 4 day hiatus from the gym. Ted has been forced into taking a break because his back is still on the mend. In fact, he even asked if I could get him an appointment with my Massage Therapist. That means he’s hurtin’!
It was a winning season for our family in Vegas. Angelina and her team were first place in Softball! Yahoo – Go Angelina!

Did you see in our local OD that a poor little dog was one of the worst abuse cases reported? The Steven-Swan Human Society was kindly requesting donations to help “Annie”. I sent in my contribution in hopes her infections, malnutrition, and other health concerns can be helped and we hear that she has found a loving home. I’m hungry…lets talk FOOD!
Don’t you just hate it when a recipe calls for 1/2 a can of something? Now you’re stuck with 1/2 a can of something that you have to find SOMETHING to do with. If you tuned in the other day, I used 1/2 a can of Lite Coconut Milk for my Red Curry Coconut Sauce. I don’t know how long you can keep an open can of coconut milk in the fridge but I wasn’t going to test it out. I used it tonight in our meatloaf recipes. I say “our” because I made a real meat (90% Angus Beef – poor thing) for Ted and a Soy Meat Substitute version for myself.
You can barely tell the difference in pictures between the Vegetarian version and the meat version in the photos.
Midweek Meatloaf – Serves 4 – 6
- 1 1/4 lb Lean Beef (or vegetarian substitute)
- 1/2 onion, chopped
- 2/3 cup Lite Coconut Milk
- 1 tsp Basil
- 7 oz Canned Diced Tomatoes-undrained (or Drain the can well and use the whole can)
- 1 tsp garlic, minced
- 1 TBS Honey Mustard
- 1/2 cup bread crumbs *DO NOT ADD IF USING A DEHYDRATED SOY PRODUCT
- 1 egg
- 1 TBS dried parsley (or 2 TBS fresh chopped parsley)
- 1/2 tsp salt and pepper (I used red pepper but black pepper is fine)
- 4 to 5 TBS Ketchup (optional)
Preheat oven to 375 F. Mix all the ingredients EXCEPT the ketchup together in a bowl. Spray a large (10 x 5 1/2) loaf pan (9 x 4 loaf for meatless) with non-stick spray. Press the mixture into the pan. Top with the ketchup and spread evenly.
Bake for 1 hour 15 minutes for the meat version and 50 to 60 minutes for the meat-LESS version. Let sit 5 or 10 minutes before slicing.
Served with a mixture of mashed PURPLE Cauliflower and carrots.
The vegetable was simply mashed together with salt and pepper as the only addition. Keep it healthy and lean!

Uma Thurman plays a radio host “Love Doctor” who offers advice to callers when seeking Mr. Right. Her “expert” advice causes a breakup between a soon to be married New York firefighter, played by Jeffrey Dean Morgan and his fiance.
The Firefighter seeks revenge and …well, all funny and good things happen. Colin Firth plays Uma’s fiance. All three are excellent in this movie. It’s funny and very entertaining. Clean and refreshing. Good movie and worth the 90 minutes of sitting time.

Meatloaf is a well-liked entree in my household, and I do like to mix it up so as not to serve the “same old thing” so I look forward to trying your “mid-week” version. Here’s one for you – – by Tom Colicchiom chef at NYC’s Craft:
1/2 medium yellow onion, diced
1 tbsp. extra virgin olive oil
1 garlic clove, minced (i use the minced garlic in jar)
2 lbs 85% lean ground beef
2 large eggs
3/4 cup fresh bread crumbs
1/2 tsp dried oregano
3 tbsp. dijon mustard
3 tbsp. ketchup
salt, pepper & parsley to taste
Saute onion over medium heat in olive oil till golden. Add garlic & saute 1-2 min. more & set aside to cool. Combine beef, eggs, bread crumbs, oregano, mustard, salt, pepper, parsley & then cooled onion/garlic mixture in bowl. Form a loaf & cover evenly with the ketchup. Bake for 1 hour in pre-heated 350 degree oven (internal temp of 145). Remove & allow to rest slightly, then cut.
