The first layer of filling is cannoli cream.  The second layer of filling is chocolate mouse topped with apricot glazed raspberries.  The third layer of filling is the cannoli cream repeated.

Frosted in buttercream with dark chocolate accents.  Blue sugar roses.  The side is an “edible image” blue paisley.

I’m not a mom but I can appreciate the special day.  On second thought, I wonder if Shane got me a card?

I do have to express a very special thank you and pass along a “BIG hug” to Pam, Ted’s daughter.  She sent me a card to wish me a happy mother’s day, but more so to say how much we have become good friends. 

After I opened the card, it got me thinking about the first time I met Pam.  It was in a gym (of course!).  Her father introduced us and she had just started college as an engineering student.  What a smart cookie!   Pam is a motivator.  She has a subtle way of presenting something that gets you thinking and, before you know it, you’re a believer.   Pam is now working with people who want to make healthier adjustments in their lives.  Make sure to check out her site and read about what she’s up to.
