Sweet Pea Quiche in Teff Crust

It looks like another beautiful weekend!  Maybe a little rain here and there but that makes all of our garden’s flourish!  Celebrate with another Bob’s Red Mill recipe. Vegetarian and Gluten Free, From Bob’s Red Mill Whole Grain Every Day Cookbook. Green Bean, Farro and Chickpea Dinner Salad

My favorite grain is farro (it’s so nutty in texture!) but this recipe lends itself to whatever your personal favorite is:  couscous, barley, quinoa, wild rice… endless possibilities.  Based on a recipe found in Bonappetit July 2014 page 32. The weather in New York was perfect this weekend so we spent a lot of time outside. Saturday:  Ted had a practice swim with the CNY Tri Club.  What a great group!  Wish I could get into swimming and biking but it’s not my thing. Boilermaker 2013

It was hot.  I don’t like hot.  Does ANYONE like hot? Probably not but some deal with it better than others.  The heat did affect the way I ran this years Boilermaker but it was still a shocker to see that my time was the same as last year.
