Boilermaker Goals and Zucchini Fritters with Jerk

It’s almost time for the Boilermaker road race.  Excitement and nervousness fill my body.  Every year I say “If I can come in at 70 minutes, that’s it! I’m done! No more Boilermakers!”  The reality is that I’m just not that fast. I’ll be running Boilermakers for a long, long time.  Some of my running goals are unrealistic.  Sure it’s great to have goals and maybe some of those goals are far reaching but as long as I can maintain perspective, realize my limits, then why not hold tight to those extremes?  Who knows, anything can happen on any given [...]

Mystic and Pan Roasted Cauliflower with Peas

Ted celebrated a birthday last week and for his get away celebration, we traveled to Mystic, CT.   We spent the night at Foxwoods Casino Resort then had the most wonderful day in Mystic, CT “…the town of Mystic exudes New England charm. Shop one-of-a-kind shops downtown (with its landmark Bascule Bridge) or at the quaint Olde Mistick Village. Linger over candlelight and an after-dinner drink at one of our cool eateries. You can even cozy up in the mansion where Bogie and Bacall honeymooned….”  - source We had a great time.  We stayed up until 3 am.  Really! You get [...]

FOFF Baked Asparagus with Balsamic (Butter) Sauce

Asparagus is one of my favorite vegetables. It’s so good for the body, when ever I can, this green, stalky, vegetable is added to my plate. Health benefits of Asparagus – Source:Nutrition-And-You Asparagus is a very low calorie vegetable. 100 g fresh spears give only 20 calories. More calories will be burnt to digest than gained.. The shoots have good levels of dietary fiber. Dietary fiber helps control constipation conditions, decrease bad, "LDL" cholesterol levels by binding to it in the intestines, and regulates blood sugar levels. What a Day and An Orchestra of Vegetables

We finally got our bikes off the trainers and onto the road. We put on our shoes and set out along dry but gravely roads. It was a short ride for me, 10 miles with the promise of food at the end. The ride seemed easy.  I expected my legs to be a little resistant since I ran 20 miles the day before.  It seems recovery for me during this training season is very quick.  In fact, I ran 20 on Saturday, a little bit of cycling Sunday with a 3 1/2 mile walk, then Monday morning ran with Jen [...]

Hunger Day and Bok Choy-Radicchio …Baked

It was one of those days when my stomach constantly felt empty.  I had my usual fruit with oatmeal.  Nibbled at a PR Bar, making it last until lunch time.  At lunch I made a salad fit for a table of four which wasn’t just greenery but a 4 oz. salmon fillet and half a baked sweet potato.  An hour later, my mouth was busy again with more snacking, healthy and not so healthy (think CARAMELS!).  I finally declared “ENOUGH!” Maybe it had something to do with the miles run and strength training? Hmm…maybe.  In fact, most probably and so [...]
