CNYEats Lenore’s Brown Sugar Pound Cake

It’s been so long since I opened the CNYEats Taste of Utica book.  But this past weekend, I had too many over ripe bananas and was curious to see what I could do with them.  Of course a nice smoothie would have been good but I was feeling “cakey” and after running 22 miles and Ted doing so well in his triathlon, we deserved a treat.  In the recipe below, I replaced 2 sticks of butter with 2 over ripe bananas.  The pound cake was delicious!   It was on the dry side but if you follow the original recipe below, [...]

Bursitis and CNYEats A Taste Of Utica Pistachio Cookies

After much research, I’ve concluded that the pain in my hip is bursitis.  I saw a chiropractor and had an adjustment. That helped my aching shoulder and neck. For my hip, he said heat it before you run and ice it afterwards.  That seems to be working.  It felt better after today’s easy run of 4.3 miles.  Since the hip felt better and I had done the required chores (grocery shop, put wash away, give Shane a bath, and more) a bike ride was in order to get rid of my excess energy. The weather was perfect and my hip [...]

CNYEats A Taste of Utica Pieta Chiusa

This week the recipe from our book A Taste of Utica is on pages 160 and 161, two separate recipes. Ruth posted this first recipe.  I thought it was a bit difficult to follow. In fact, I’m not sure at all what the end result is suppose to look like or taste like.  I tried to do a search but nothing for “Pieta Chiusa” came up.  If you can offer any guidance on this one, it will be much appreciated. “Here is Mom Constabile’s recipe for “Pieta Chiusa”  by Ruth 6 eggs 6 tsp. baking powder 1/2 tsp. salt 1/2 [...]

CNYEats A Taste of Utica Pastaciotti or PUSTIES

I never really appreciated the name "Pusties" for these Utica Italian delicacies. The word just doesn't sound appealing however, the little pastries look and taste a lot better than their abbreviated name. In our book, A Taste of Utica , there are seven recipes for Pusties: Pages 153, 165, 166, 200, 201, 202, and 203. All very similar and I have detailed only a few. Buy the book, at Taste of Utica (Lulu) and make your choice. I used the first recipe, "Pastaciotti (Pusties)” by Peter Notaro (page 153).   Makes 24 Pusties. Notes of caution: 1. Use mini-tart pans. 2. [...]

CNYEats A Taste of Utica: Fried Chicken

A posted recipe by Rainie Piccione.  It’s one of Loraine Piccione’s favorites.   Look on page 81 of our book and you will find the following, easy to follow directions for frying your own chicken. I don’t have a deep fryer so I used a tall sided cast iron stew pot.  I put about 2 inches of oil in the bottom and had a wire mesh top to stop any hot oil from spattering over the stove top and possibly from hitting me. Fried Chicken Vegetable oil for frying 1/3 cup water 1 chicken, cut up (always use a small chicken) [...]
