Steel Cut Oatmeal

A while ago I bought a different brand of steel cut oats, "John McCann Steel Cut Oat Meal" It's actually referred to on the can as Irish Porridge.  The nutritional information is comparable to other steel cut oat brands. The taste is nutty with a slight chew.  I love the storage can!  It is so official looking with the words "Certificate of Award, Uniformity of Granulation" Then there are some approval identifications by the President of Departmental Committee and a Judge, Mr. Chas. Sweet and Savory Butternut Squash

I kept looking at the butternut squash on my counter wondering what to do with it.  It was the chosen side dish for tonight and once I've decided on the side vegetable, it's rare my mind can be changed.  This is what I came up with and it was pretty darned good.  Sweet and Savory Butternut Squash   1 medium butternut squash 1 TBS SmartBalance (or butter) 1 tsp brown sugar 3 spring onions, chopped small 1 tsp fresh rosemary salt and pepper 2 TBS grated Parmesan cheese 1/4 cup Eggbeaters (or one whole egg - slightly beaten) Put your squash in the microwave on [...]

Top of the Tuesday To Ya!

Happy Tuesday!  It's going to be a beautiful day today and that just makes you feel good. This morning was a good workout for legs beginning with 20 minutes of Elliptical Training while watching Tyler Florence on "How to Boil Water".   Then straight into legs:  5 sets x 20 reps of leg presses. 5 sets x 12 reps of squats. 4 sets of the following, doing 12 to 20 repetitions of each:  Leg curls and dead lifts.  Leg extensions and Seated Calf raises. A Vigorous Leg Workout

What a storm last night! A Ratatouille Tart and a Fresh Corn Salad with a Twist

When I was checking out Lauren's blog of  I'll Eat You, this past Thursday for CEimB, she had posted the most wonderful adaptation of an Ellie Krieger recipe.  Lauren's post was called "Cornmeal-Crusted Ratatouille and Goat Cheese Tart.  By the way her photo's looked, I had to make this recipe.  The following is MY adaptation of Lauren's recipe.
