Southwest Tilapia

I gave in and bought a compression band for my hamstring Unfortunately, the XS was too small by 1/2 inch.  Figures!  Hopefully by next week the  small size will be in and I'll be ready to go.  In the meantime, I'll try to focus my attention else where. During my 70 min. run yesterday, the entire length of both legs were sore.  That was just from my leg weight work out.  Not sure how the 13 miler will go.  I plan on that run Friday morning and, unfortunately, we are suppose to get really dumped on with snow so running outside will be limited. No desire for [...]

Basil and Pine Nut Pesto on Vegetables and Chicken

Our basil is beginning to feel the effects of cooler weather.  Instead of letting it be “one with nature”, or freezing it, or drying it, I decided to use it up in this wonderful fresh basil and pine nut recipe.  Ted said it was the most flavorful meal he has had in a long time.  Great compliment since we just came back from Newport! This pesto is great over green beans with fennel and chicken and also fish. Don’t use too much on a delicate fish such as tilapia because the pesto flavors might overwhelm the light freshness of the [...]

2nd Day of the Week

Happy Tuesday!  Actually, Happy FAT Tuesday!  Are you celebrating?   We went to New Orleans a few years ago, just after Mardi Gras.  We had a good time but the weather was a bit windy and cold.  Seems to be our luck, doesn't it?  So they are getting ready to celebrate in the streets. The festivities begin at 8 AM with the parade.  What a fun place to be.  How my Fat Tuesday Started... I  worked 20 minutes on the Elliptical. Ran 1.6 miles on the treadmill. Did a leg workout for 30 minutes and walked with Shane for 3 miles [...]

Company at work

I forgot to take the Celebrity's photo!  Oh well. It was Shane!  He came to work with me this morning and did really well.  Hope I don't have to pay him.  We left a bit early for lunch because I had some stops to make at the post office and bank.  Shane got a nice biscuit from the window teller at the bank - he was happy. That was his payment for this morning's work appearance. I picked up a really interesting looking salad dressing that's nutritionally and ingredient wise attractive: Nutrition Facts:  Serving Size 2T Calories 30, Fat Calories [...]

Dragging on Thursday

It was a tough one today! I didn't even get my energy level up while working out.  Shane and I did go for a pleasant run-walk routine down the Parkway for 45 minutes.  Breakfast was 1/4cup Buckwheat Groats with Cinnamon, 1 tsp Natural Peanut Butter, 1 TBS raisins, 2 strawberries. For protein: 1 scoop J.Robb Chocolate with 2.2 oz fresh blueberries, 1 strawberry. I also had 1/2 a grapefruit.  So that should hold me over until about 10:30AM. I think the groats would be better as an "add-in", say 1 to 2 TBS. They are a bit to big and round [...]
