Break the Barrier and Tempeh with Vegetable Salsa

When we exercise for a long time, we get bored.  Our muscles get bored and reach a plateau.  We stop seeing changes and begin to wonder why are we working so hard?  Like anything in life, change has to happen to make gains.   We reach a comfort level in our workout when it’s not as hard as it used to be.  We’ve adapted.  What is hard is making a change.  It’s tough physically (getting out of that zone) and mentally. Here is an inspirational quote that sets the stage for breaking the barrier: By Terrence Mahon, Team Running USA Head [...]

Importance of Feedback and TEMPEH

First the feedback: Feedback is important when delving into areas unknown. Or in other words, embarking on new workout challenges.  It really helps when others offer advice, counseling and tips, all based on expert knowledge or personal experience. The other day, when I was inquiring whether I was on the right track for increasing mileage and possibly training for a marathon, this is only some of the great feedback I received: From PAM of Total Health Counseling: Joanne, Congratulations on your marathon training! I would love to work with you as you increase your mileage. You also mention wanting to [...]

"Tantalizing Tempeh"...isn't that just plain fun to say? :)  Tonights dinner was a last minute thought because, well, I forgot about dinner in my rush from house, to car, to work this morning.  But it worked out well. All Squash Do Not Cook The Same

We had a major blow out tonight.  I thought I could cook the spaghetti squash in the microwave the same way I cook the Acorn and Butternut. Not!  This is what it looked like: Ted volunteered to clean up the mess. He regretted it. However, the squash was salvaged and this is what we did with it: Cooked 11.4 minutes in microwave before the mishap. Cut it in half. Tossed the seeds and peeled the inside "meat" away with a fork into a dish. In the meantime, I had cooking on the stove, 10 halved asparagus spears (sauteed in [...]

Sue Bakes Tasty Truffles

Sue brought to work some pretty tasty treats today,  "Mocha Truffle Cookies".  She said .. "you have to try one. It's not diet fare, but worth every sinful bite".  So I tried one. She was so right! Delicious. It tasted like a mocha brownie.  Some of the ingredients were chocolate chips, unsweetened cocoa, coffee, toffee pieces....mmmmm!  I did share this glorious little tid bit with my hubby at lunch. Can't say I don't share. Speaking of lunch... needed something healthy after being teased with such sinful treats. I glazed my salad all over with my favorite Maple Fig [...]

Some can,Some can't

Some people seem to be very good at multi-tasking. I'm not. I told Ted about a mis-hap this morning while trying to accomplish 3 things at once: punch in a phone no., look up a different phone number, read email.  There is some poor guy out there who is still running scared, looking over his shoulder, watching out for the crazy chic who called him this morning about a salt water bath.   Ted is now very worried about his dinner tonight since the following menu is planned:  1. Ted = steak. 2. Joanne = tempeh. 3. Shane = dog food.  Ted's [...]
