Mushroom Tart

Years ago, we hosted a holiday party and I made a wild mushroom tart.  It was filled with assorted wild mushrooms and it was delicious.  I love mushrooms.  As a vegetarian, they often make an appearance in many homemade dishes. Nutritional benefits of mushrooms high in antioxidants, selenium, vitamin D, folate. 8oz of grilled portabella mushrooms and 8oz of shiitake mushrooms provide 3 g of fiber to benefit the digestive system reducing risk of heart diseaase. Fiber, potassium and vitamin C for a healthy heart. The mushroom stem is a good source of beta-glucans and chitins (dietary fibers) which can [...]

Goals and Chocolate with Francois: Chocolate Pecan Tart

1820.54 miles. That's my official tally for 2010.  The road miles put in for running enjoyment and race training.  So I didn't hit 2000 miles but who knows what 2011 might bring.  I'm hoping to run Boston without pain (or at least not too much).  In any event, I'm hoping to RUN BOSTON and that's what I'm working towards in training for the next 3 months.  It's not going to be easy.  In fact, last week I ran over 40 miles and this week I'll run 45 plus and it was TOUGH!  I'm wondering how I'll ever log my goal [...]

Chocolate with Francois: Honey Saffron Tart

This is an interesting baking group.  We use a book by Francois Payard and it’s all about chocolate.  The recipes are not for the faint of heart.  They are challenging.  This month, the pick was made by Asthe of Astheroshe-Accro. Make sure to visit her site for the recipe if you want to give this one a try. There were three taste testers at our house: myself, Ted, and Richard (Ted’s brother and the family choco-holic). I did make the Chocolate Chiboust this time however, because it called for gelatin which is not vegetarian friendly I substituted Xanthan Gum and [...]

No Long Run on Monday and Cinnamon Pear-Berry Custard Tart

Monday shouldn’t be the day you choose to get up super early and go for a long run.  It certainly wouldn’t normally be my choice but due to work details, Tuesday and Wednesday were out.  Wednesday is my day of preference for long runs because the body has had 2 days of rising early but not yet exhausted.  Monday?!  Monday is tough. Body says “STAY IN BED!”  Mind says “get going, get it over with”. I met Jenn today for a run of 6 miles.  Last night we had a very heavy garlic pasta dish and I’m one of those [...]

Strawberries and Fillo Dough

Gym-mania today:  50 minute treadmill run + 45 minutes of weights working chest and arms.  Shane and I went running around the golf course for 4.5 miles.  Total running miles today= 10.01 at an average pace of approximately 9.3.   I really love this time of year.  It was 50 degrees so shorts and a light running jacket was perfect for an early morning run.  At 5:30, it was just beginning to get light out which meant we had so many more running route options.  That’s why we were able to go up into the golf course.  Any earlier in the [...]
