Life doesn’t go as planned and Banana pineapple quick bread

As usual, I signed up to run not one but two fall marathons.  Marine Corp Marathon was an emotional experience with not one of my better finish times. A week before my next marathon, Space Coast in Florida, I’m feeling grumpy, burned out and not in a good place to run a marathon. It’s the week of Thanksgiving and our plans to enjoy the holiday and the race with family have changed so many times because of Luke, now 19 weeks old, because I don’t want to go, and because of another health issue of which we will find out [...]

Easy Apple Bread with Cherry Vanilla NuStevia

Before getting to the FAN-TAB-ULOUS recipe below, I have to share this running quote with you from Gibson’s Daily Running Quotes.  It’s so important to get words of inspiration like this to beginning runners.  "If you are capable of running, then you are cut out to be a runner. Don't think that you aren't cut out to be a runner. Don't let other people convince you of that. Ignore them. Don't waste your time wondering if you got the right gifts ...from the gene genie to run as fast as you want to run. Don't wallow in doubt about exactly [...]

FOFF Indian Bread

This week’s recipe for FOFF (Fusion of Food and Friends) was quite unique in that the bread is STEAMED in COFFEE CANS.  I’m not sure about you but Ted and I haven’t seen a coffee can in this house in years. What I did have was the Crock-Pot Bread/Cake Pan. Since the bread is steamed fully enclosed and my pan had vents, it had to be covered with foil.  Not a problem but you have to take extra care if lifting the foil while the pan is still hot. This is an easy recipe that produces a sweet, moist corn [...]

Carbohydrate Loading and Howdy Cowboy Bread

The week before an endurance event, something lasting longer than an hour and a half, it’s always smart to keep an extra eye on your diet.  Not to reduce calories but to create a balance which allows the body to store enough glycogen so you can maintain your pace longer without getting tired.  Unfortunately, all that bread and pasta won’t add extra speed but you might feel better and have a little more in the tank at the end if you eat right in the beginning. Example of high carb – low fat meals (a week before the event): Oatmeal [...]

WOW Runners and Gluten Free Honey Pound Cake

Sunday morning was one of the best mornings.  Since we rolled the clocks back one hour, it seemed there was so much time to accomplish all my daily goals. As I was baking up a storm, one recipe right after another, Ted was able to stream the NYC Marathon on his iPhone since television and computer wasn’t offering it in our area. It was exciting! It was a great victory for Mutai. Boston AND New York in the same year. Wow!   But I really wanted to see how the women did. SOURCE:  Dado and New York-resident Ethiopian Buzunesh Deba passed [...]
