Running in the Cold and Toasted Sorghum Soup with Greens and Beans

It’s Saturday and almost the end of another week into Boston Training. Sunday will conclude week six and it hasn’t been easy.  The winter weather has challenged almost every run.  I’ve been forced to hit the treadmill a few times.  Fortunately, long runs have been done all on the road, even though they’ve been miserably slow.  I’m not sure I get the best workout on the treadmill because I crank up the speed in an effort to get it over with quicker.  This means I’m exceeding training paces. FOFF Thai Scallop Soup

Chef Carla Vavala offered a wonderful recipe for Thai Chicken Soup in her book Fusion of Food and Friends.  I used all the wonderful flavors of that recipe but changed the focus from chicken to scallops.  Nice!  If I do say so myself. I used whole wheat egg noodles to really give the dish a healthy kick. FOFF Lentil and Sausage Soup (Vegetarian Version Offered)

Carla Vavala sure knows how to cook. This was another big hit in our house. Even though I made two recipes, one for me using vegetarian sausage and one for Teddy and Ted using Italian sausage, the stew/soup was easy to make.
