Seared Scallops with Shaved Fennel, Cucumber and Grapefruit

Seared, charred, down right burnt and completely collapsed The remains of Union Fork and Hoe. All buildings in the middle and to one side are gone. The fire is out but curious locals still go up and down our road and park in our lot. The fire was ruled accidental and clean up will begin immediately.  What a week, burning building and good running (so far). FOFF Thai Scallop Soup

Chef Carla Vavala offered a wonderful recipe for Thai Chicken Soup in her book Fusion of Food and Friends.  I used all the wonderful flavors of that recipe but changed the focus from chicken to scallops.  Nice!  If I do say so myself. I used whole wheat egg noodles to really give the dish a healthy kick. Sweet Pea Peach Salad Under Sautéed Scallops

Ant Attack and Bay Scallops

I  was bound and determined to get back on track with my running schedule. I did a double workout today incorporating yesterdays speed work with todays easy 50 minute run. Was it tough? Oh yeah. Did I get it all done? Oh yeah.  64 minutes on the treadmill running 5 minute intervals with 3 minute rests at half marathon pace PLUS 55 minutes outside with Shane for an easy run.  13.4 miles.  My bad leg is grumbling but the rest of me is fine.  Would I recommend making up a missed workout to anyone else by doing double duty? Scallops in a snap

Family walk this morning.  It was a rest day for all of us.  No running, no cross training, no weights. We went for a nice 4 mile walk with Shane.  The morning was a mild 43 degrees until we turned to head home.  The wind picked and chilled our faces.  Still undecided on running distance tomorrow.
