Successful Lemon-Shallot Topped Salmon but Rueful Eggplant Rollatini

I was running the other morning. It was a really long run so I was out there for quite some time. It was inevitable that someone I knew would see me.  Funny thing about running alone, you get into your own little zone where you’re only aware of yourself, your legs, motivations to keep pushing forward.  So when a friend says “I saw you running down ..such and such street” it seems to shock.  My first thought is “Gosh! I hope WAS running and not walking!”  My second thought is “No, he/she said “running” but I really hope I was [...]

Pier’s and Blake Steakhouse Restaurant Review

The morning sky can be so interesting. Do you ever look at the sky and see pictures in the clouds? It’s nice being outside and watching the sun come up.  This morning I ran my last 16 miles before the Philadelphia Marathon next weekend.  It went well except for my left hamstring.  My pace was faster for the long run, averaging 8:53 for 16 miles.  I’m not sure that means I’ll ever achieve my goal pace for 26.2 miles but either way, however long, I’ll make it to the finish line.  If you want to follow, go to: Realtime Race [...]

CEimB Chinese Salmon Salad

Happy St. Patrick's Day!  Looks whose excited about celebrating the patron saint of Ireland..   According to legend, Saint Patrick used the shamrock, a three-leaved plant, to explain the Holy Trinity to the pre-Christian Irish people. On with the recipe for CEimB This week Danica of Danica’s Daily picked a TERRIFIC Ellie Krieger recipe. The original recipe is “Chinese Chicken Salad” but no chicken for me and I know Ted enjoys fish so I thought Salmon would be a great substitute. It was. Here is the link to the original recipe:  Ellie’s Chinese Chicken Salad…. and the following is how [...]

Serious Thinking and Gluten Free Black Bean Salmon Burgers

In the next few weeks, I’m going to seriously weigh my options concerning the Boston Marathon.  Training has not been fun, not anything like my first marathon. I enjoyed just about every day of running training for WineGlass last October.  Trying to pursue my endeavors to train hard for Boston, I’ve been met with one set back after another. Is someone trying to tell me something?!!! It’s time to think about the upcoming race and why I’m doing it. If the hurdles keep on coming, I’m going to back out of Boston 2011.  I want to enjoy running and look [...]

CEimB Salmon Florentine and Quinoa Pilaf

Those of us CEimB die-hards are still cooking.  We love the healthy and easy recipes of Ellie Krieger and even though the site is not being kept up to date, we are teaming together to cook some great food. This week Kathryn of Grandma’s Kitchen Table has chosen the recipes.  Check her site for a complete review and also for next weeks recipe.  Salmon Florentine – click for recipe The result was a very good piece of salmon with a good topping.  It could have used a bit more flavor.  Both Ted and I agreed that we would have preferred [...]
