Green and Yellow Bean Salad with Ricotta

I told Ted I would just like to get out of my own head.  There seems to be one negative thing after another that continues to go round and around in my brain.  The media shoves bad news at us every day.  Finally I had to ask myself “what can you do about it?”  The answer? Nothing. The things that plague my thoughts, I have no control over.  Then I asked “If you have no control over these things, why worry?”  The answer makes no sense and that would be “Just in case….”.    Now if you think about it, 80 [...]

Grilled Salmon with Sweet Corn and Plum Tomato Salsa, Sweet Potato Wedges, and Green Pepper Vinaigrette

It’s hard to believe we’re in Utica with the forecast predicting so many days of sun.  I don’t know how the folks around here are going to deal with it?  All that vitamin D, all that happiness, it’s going to ruin our upstate reputation!  Recipe time… Eat Fish. Feel Good (not grumpy). Let’s face it, when you eat a lot of fish like Ted and I do, the quick way to prepare it gets old. Guess that’s the way it is with any food you eat on a regular basis.  Even though you enjoy it, you eventually want something different.  [...]

Italian Meat(less)balls Nestled in Squash

I’m still trying to get Ted to eat less meat.  I know… for all you meat lovers you ask “Why?!!” The answer is simple:  because it would make cooking meals easier FOR ME.  No more planning a recipe for meat and another for meat-less.  It would be one recipe, one meal, one pot to clean.  This recipe does just that.  One bowl to mix and one pan to cook.  Did Ted like it?  Read on… Serves 4 to 6 1 package (14 oz) Meatless crumbles (I used Lightlife Gimme Lean Beef) 1/4 cup breadcrumbs *season with 1 tsp Italian seasoning [...]

Catfish Enchiladas with Creamy Arlo Dofino Havarti

So far, the weather in Boston looks Purrrr-fect! It’s a good thing as well since I’m expecting this year I’ll be out on the course a little bit longer. This morning, I took my foot for a solo run, meaning no Zoey, no Shane. It didn’t feel that great.  When I pushed the pace a little, my calf started feeling funny and my leg went weak.  Now I’m in a conundrum as to which shoes to wear.  A.  Performance running shoe which the podiatrist put inserts in or  B.  More of a shoe which doesn’t have the inserts but has [...]

Bouchon: Chocolate Chunk Chip Cookies

Don’t you love it when you receive a package, a gift from friend or family for Christmas and it says “Open Immediately!”   No waiting until Christmas eve or Morning, when ever your tradition dictates opening gifts …or…well, whenever Santa drops them off… We received such a package this past week.  It was sent from Harry & David and YES – it WAS fresh fruit. So delicious!  Just look at these pears! I said to Ted “Please don’t take them out of the box until I take a photo”   He was ok with that but couldn’t take his eyes off the [...]

Hours Trumps Miles and Meyer Lemon Baked Fries

When I worked with a trainer in 2010 to run my first marathon, it was made clear that most of my runs would be based on hours:minutes not miles.  I didn’t get this.  Ever since I had started running it was always how many miles were run that day, that week, that month.  It wasn’t hours!  In addition to a history of running based on miles not hours, my thought was “if I have to run 26.2 miles, I want to come pretty close to that amount in training.”   My trainer understood but made clear the reasoning behind the hours [...]
