Golabki, Golumkies Or Just Plain Cabbage Rolls

Polish stuffed cabbage rolls or even more fun to say “Golumkies”.   These titillated my taste buds years ago by an excellent cook, a true-blue Polish lady.  She made everything from scratch.  Not a person at the table that didn’t “ooh and ah” about what was just eaten.  The best part:  there were always leftovers to take home. CNYEats Pierogi

In our book A Taste of Utica, the recipe for Pierogi can be found on pages 146 (the dough), 147 (the filling), 148 (more pierogi dough #1, and #2), and finally, Leniwe Pierogi – Lazy Way out. Take your pick.  The dough recipe I made was the most basic by Mikki Markowski.  The filling used was the Sauerkraut (Kapusta) filling.  Make sure to check out the Leniwe recipe.  It really is a pierogi twist. Bigos  (BEE-gohs) is a Polish dish with layers of sauerkraut and cooked meats simmered in stock and served over boiled potatoes.  Bigos is also known as Hunter’s Stew.
