CNY2NYC Group Run and Healthy, Healing Gluten Free Pancakes

UPDATE:  NYC Marathon CANCELLED.  Read this post and STILL run for a good cause. For some people running ING NYC Marathon is a life long dream.  Imagine the disappointment when the runner is faced with the option of whether to run hoping for the best in the aftermath of disaster or defer an entire year, after all those months of training.  It’s a tough choice.  It’s tough not to consider the folks that are trying to recover from storm damage. The farthest thing from their mind is supporting a marathon.  But on the flip side, the marathon brings in millions [...]

Utica Road Runners and Almond and Oat Pancakes

Saturday night was the Utica Road Runners awards banquet.  What a great group of folks. So friendly and welcoming.  Although I have been a member for at least 3 or 4 years now, I’ve never attended the awards banquet.  You know how you’re never quite sure WHEN to define yourself as a “runner”?   This year I felt I could justifiably call myself a runner since I ran my first marathon.  In doing so, I also ramped up enough miles to get an official Road Runner 1000 miler jacket! Along with the jacket, there were some other super prizes: The Sports [...]

Peach Banana Bliss Pancakes

It’s Sunday and a day to sleep in.  Shane allowed us to stay in bed until 6:30 today which was very kind of him.  The three of us went for a 4 mile plus walk over to the college to grab a tennis ball Ted spotted yesterday.  We went to the golf course for a walk up the hills and around the path. There were quite a few people running and walking along the road but only one lone runner in the golf course. The golfers were already out hitting long drives, some landing in the fairway, some in brush [...]

CEimB: Mixed Berry Cobbler Pancake Cookies

This weeks Craving Ellie recipe was chosen by Pam of Cookies with boys.  Pam is always making something that is sure to please every family’s tastes.  Check out her site for this weeks recipe.  The recipe, by Ellie Krieger, can also be found at FoodNetwork.   The recipe I made, can only be found here at Apple Crumbles. I absolutely loved the sound of the Mixed Berry Cobbler, but knew we would only take a couple of bites then the rest would go to waste.  We just don’t eat desserts.  Since I didn’t want to miss this weeks cooking with the [...]

Wheat Pumpkin-Banana Pancakes

What a great Monday!  It was a vacation day and the weather was gorgeous. A scorching 90 + degrees and humid.  It was a day for water. Ted and I took off up to Sue’s house to spend some time with Shane in the lake. He just loves it.  You would think he’s more Lab than German Shepherd.   Before going to Sue’s, I did some really fun things in the kitchen and here is one of them. This pancake recipe is based on an Ellie Krieger recipe.  It mixes 1/2 all-purpose flour with 1/2 whole wheat so you get the [...]

Those who were once welcome…

Sunday, in spite of the rain, we managed to get 14 miles of cycling in.  As long as it didn’t thunder and lightening, we were ok.  It turned out to be a good breakfast ride. Today’s running accomplishment:  4.5 miles on the treadmill plus 4.38 miles outside with Shane.  Total 8.88 miles average pace 9.25.   In between the two running sets were weights.  It was chest and arms today.  A total of 40 minutes working with dumbbells, bars, and cables. The rest of this weeks running schedule looks like this: Tues:  Hardest day = 6 to 8 400 meters with [...]
