FOFF Egg Salad Sammies

This recipe was adapted from Carla Vavala’s book Fusion of Food and Friends.  Found on page 50, it’s a classic representation of the egg salad sandwich…until Apple Crumbles got hold of it.  Here’s what happened. I began mixing up the recipe for the egg salad and it brought back memories of when I was a kid.  My sister loved egg salad but I wasn’t quite so enthusiastic.  My sandwich of choice was sliced apple between two slices of bread coated with butter. Healthy? Maybe not 100%, at least the apple was…but back to the egg salad.  So I was thinking [...]

Confront it, Ceiling Saga, a recipe for Crab and Bleu

Do you give up when something scares you or take it on as a challenge to over come?  Continuous effort–not strength or intelligence–is the key to unlocking our potential.–Winston Churchill It’s good to get out of our comfort zones once in a while.  You never know when you’ll discover a new passion, set new goals, travel a new road. I’m running the Summer Sizzle for the first time tomorrow.  I  signed up for it years ago when the course left from MVCC and ran around the Proctor Parks for five miles, a route I walk and/or run weekly.  Although I [...]

Serious Thinking and Gluten Free Black Bean Salmon Burgers

In the next few weeks, I’m going to seriously weigh my options concerning the Boston Marathon.  Training has not been fun, not anything like my first marathon. I enjoyed just about every day of running training for WineGlass last October.  Trying to pursue my endeavors to train hard for Boston, I’ve been met with one set back after another. Is someone trying to tell me something?!!! It’s time to think about the upcoming race and why I’m doing it. If the hurdles keep on coming, I’m going to back out of Boston 2011.  I want to enjoy running and look [...]

Physical Therapy for Muscle Imbalance and Broccoli Clam “Egg Drop” Soup

I went to the doctor for a hamstring that won’t heal.  The result:  Muscle imbalance. My right hammy is considerably weaker than the left. Every time I stress my body, that muscle takes the brunt of it. What the doctor said:  “You won’t be ready for a marathon until next year”.  What I said: “Oh! You mean I shouldn’t try to RACE a marathon until next year .”   And so I can still run, maintaining an acute awareness of my pain level.  Speed training is restricted to tempo runs.  I begin working with a physical therapist on Monday.  Funny thing, [...]

There’s always a little left and The Coddled Egg

Hal Higdon, an American writer, runner and co-founder of Road Runners Club of America (RRCA) offers an inspiring quote: Even when you have gone as far as you can, and everything hurts, and you are staring at the specter of self-doubt, you can find a bit more strength deep inside you, if you look closely enough. If I keep collecting these quotes, I’ll be carrying an encyclopedia during my marathon. Today’s workout was going to be easy.  Yesterday was a day off.   I was able to work chest and arms Sunday afternoon and back with shoulders yesterday before heading out [...]
