Banana Nu-Bread Pudding

With 1 quart of skim milk that was unopened and nearing expiration, what else could I make? Oh sure, some healthy soup but that’s not as much fun to make as a good old dessert that brings back childhood memories of Mom’s cooking.  Bread Pudding!   Using skim milk, an over ripe banana and some Nu-Naturals Simple Syrup and Nu-Naturals Cocoa Syrup, this is a reduced fat, reduced sugar version of one AWESOME dessert. *Don’t have any Nu-Naturals Stevia product, get it HERE or, simply double the sugar in the recipe to 1 cup. Serves 16 1 Quart Skim Milk 1 [...]

Easy Apple Bread with Cherry Vanilla NuStevia

Before getting to the FAN-TAB-ULOUS recipe below, I have to share this running quote with you from Gibson’s Daily Running Quotes.  It’s so important to get words of inspiration like this to beginning runners.  "If you are capable of running, then you are cut out to be a runner. Don't think that you aren't cut out to be a runner. Don't let other people convince you of that. Ignore them. Don't waste your time wondering if you got the right gifts ...from the gene genie to run as fast as you want to run. Don't wallow in doubt about exactly [...]

Long Jog and Pickled Beets with Tagatose

This weekend was our anniversary.  13 years!  It hasn’t gone well. This and that and the other…you know.  Naturally falling in line with all other things upsetting, my running suffered.  My mind wasn’t in it so every step, every foot fall, felt like a bowling bowl dragging me back.  Saturday:  A 90 minute run. Ran with Ted and the dogs then finished the last 40 minutes alone. My mind was heavy with bad thoughts and upsetting things.  I was just happy to finish. In spite of everything, I looked forward to Sunday’s long run. 20 miles.  Taking it easy and [...]

CNYEats A Taste of Utica Sesame Cookies

If you remember back to last summer, I posted Regina’s Sesame cookies from the book A Taste of Utica. Today, we have Mella’s Grandson’s recipe for Sesame Cookies, on page 162 of our book There is another recipe on page 163 posted by Carm Guarnieri which is very much the same. The only change I made to this cookie was to replace the vanilla extract with Cocoa Bean Extract from NuNaturals.  What a good move on my part. Loved these cookies! *The recipe below is 1/2 the recipe from the book which resulted in 2 doz. cookies 2 cups flour [...]

NuNaturals Zucchini Breads

Just a running thought by Alex Ratelle from the October page of Runner’s World 2011 Calendar: “I eat whatever the guy who beat me in the last race ate.” Makes sense to me. I received an email in September and this is what it said… "…many consumers want to appease those special in-home guests that are faced with specific eating limitations such as gluten-free, dairy-free, vegetarian and raw preferences or sugar-free diets by entertaining them with menu options serving their restrictive diet needs… I believe you might enjoy reviewing and trying some of the unique and creative uses of sustainable [...]
