Steal the show Tillamook Cheddar Sauce over baked spaghetti squash “pasta”

I entered another contest guys!  If you're interested, go to chefsroll.com/opportunities/tillamook-big-cheese-chef-competition.  Make sure to try my recipe first. If I have never gave myself kudos before, well now it's a first. This is good. REAL good and it turned out so tasty because of the bold flavor of Tillamook Sharp Cheddar Cheese.  Read on friends. Can you use pasta for this recipe? Sure you can.  I’ve made notes for any changes that may suit your families taste buds a bit better but one thing you cannot change is the Tillamook Sharp Cheddar Cheese.  Why?  Tillamook Sharp Cheddar has a “bold [...]

Vegetarian Moussaka

Some of the recipes posted in the Utica OD look pretty good.  This is one of them.  In this version of Vegetarian Moussaka there is no meat.  It is simply a combination of eggplant, chickpeas and a homemade Greek style tomato sauce.  Simple but complex in flavor because of the Greek Seasoning.  For the seasoning, I used a combination of onion, spearmint, oregano, garlic, allspice, cloves, nutmeg, ginger, salt and pepper with a pinch of cinnamon.  *Look for Mediterranean spice blend in the store or make your own. Vegetarian Moussaka Ingredients 4 tsp of Mediterranean / Greek spice blend 1/2 [...]

My Favorite Crustless Quiche

It’s getting close to another marathon run but this time it will be different.  I’m going solo.  That’s right.  My partner in “crime” is sending me off to Duluth, MN all by my lonesome.  Ted will be working on his own training for upcoming triathlons so after accompanying me on 16 previous marathons, he says “you’re on your own for this one.”   I don’t mind travelling on my own since I used to do it so often, starting in college then for work.  It’s just nice to have someone with you for conversation.  Then again, once a runner gets around [...]

Gluten Free Vegetable Quinoa Lasagna

Nothing fancy happening this weekend except another 18 mile long run. It’s going to be a tough one though.  It’s one of those runs with faster middle mile pacing and to help me do that, I’m running 8 easy miles then a 10K race with a 4 mile follow up finish.  I have a sneaking feeling those last 4 miles are going to be torture.  Have you ever put a race into your marathon training long run? Did you run at marathon pace? half marathon pace? or were you unable to control it and raced all out at 10K pace? [...]

Warm Kale Salad with Hummus and Pistachios

Positive Affirmations:  One we’ve all heard before… “The greatest barrier to success is the fear of failure.”  - S.G.Eriksson Confidence. *The article dated January 30, 2013 by Geoff Roes reminds us that the power of the mind can pull us through our challenges and fears.  Last week, I went to the podiatrist fearing the worst.  This week, I have renewed confidence that my 2014 Boston Marathon won’t be a completely agonizing event.  First, I’ve put in the training. My body has been through physical stress, adapted physiologically and can run a little quicker with the same amount of stress. Second, [...]

Syracuse Half Marathon and Healthy Whole Grain Lasagna

This week, I used a local half marathon for my tempo training run. After running a 2 mile warm up with the dogs, Ted and I left for Syracuse.  The drive out there didn’t look promising and never mind very motivating! A white out on the thruway out to Syracuse. Temperature, 24 degrees. Wind at 13 mph. It was a bigger crowd this year than last in spite of the horrid weather. I didn’t dress very warm, a long sleeve sports shirt and Marathon Maniac wind breaker. When they handed me the Syr. Tee shirt for the race, I thought [...]
