Warm Kale Salad with Hummus and Pistachios

Positive Affirmations:  One we’ve all heard before… “The greatest barrier to success is the fear of failure.”  - S.G.Eriksson Confidence. *The article dated January 30, 2013 by Geoff Roes reminds us that the power of the mind can pull us through our challenges and fears.  Last week, I went to the podiatrist fearing the worst.  This week, I have renewed confidence that my 2014 Boston Marathon won’t be a completely agonizing event.  First, I’ve put in the training. My body has been through physical stress, adapted physiologically and can run a little quicker with the same amount of stress. Second, [...]

Resilience and Kale Rainbow Slaw

From Stanton Samenow, a forensic psychologist and author of the 2004 book Inside the Criminal Mind. "They seem to have an unfathomable ability to shut off knowledge of the consequences, of the difference between right and wrong. There exists among us monsters.  It’s a scary world.  We cannot allow fear to get the better of us and stop us from living.  It’s our life. It’s our right to love, laugh, and advance our lives in the way we choose.  No one has the right to take it all away and they can’t unless we let them.  I won’t let them.  [...]

Road Trippin’ and Kale Slaw with Walnut Crumble

All four of us jumped in the car and went on a holiday road trip. It was a rough start with Shane whining, Zoey leaping front to back, but after a couple of hours, when the dust settled so did the dogs.  We spent hours on the road before enjoying a night in a Best Western that only charged $5.00 per dog. ACES!  Usually it’s $10 to $20 per four legged friend.  The only glitch: The room didn’t have any heat (it was 35 degrees outside) and there were stink bugs hanging on the curtain.  We opted for a less [...]

Boilermaker CLOSED and Crispy Kale Chips

I couldn’t talk Ted or Teddy into running the Boilermaker.  As it turns out, I won’t be alone.  Pam and Heman are  signed up and ready to run.  They will be visiting from sunny Florida that July 10th weekend and the three of us are running the 15K Utica Classic Boilermaker. The race was capped at 13,000 this year and hit the cut off Saturday morning.  As soon as we read in the Saturday morning paper that there were just over 100 entries available, we knew it would close that day.  It’s such a fun race. It’s organized very well. [...]

A Busy Meal Product Review

Another running day but the morning weather was crapola so I ran on the treadmill.  I had enough running in the rain last Saturday.  The recap:  4.6 miles on the T/M which included 6 strides at the end.  Back, shoulders, and abs with the weights. Since tonight’s class (First Aid) might go until 10 pm, I wanted to make sure I could grab an extra half an hour or so sleep in the morning.  Thursday, I will only have aerobics (running) and no weight workout.  As for poor Shane, we had to brave the weather because he needed to go [...]

Cranberry Kale Side Dish

Until this year, I never saw the large bags of Collard Greens and Kale in the grocery store.  Those bagged greens that have been pre-washed make a busy week night that little bit easier.  This past Sunday while at the store, we grabbed a bag of kale and decided on the following recipe for this busy Wednesday evening.  It was modified from a recipe found on Allrecipes.com. I found out that kale is not a favorite of my dear husband.  However, this recipe seemed to win his heart. Ted uttered the following comment while eating dinner..."You actually made kale taste really good."  [...]
