Squash Patties

A simple Squash Pattie recipe to pair with just about any main course.  Tasty and light.  6 Patties. 1 Butternut Squash Salt and pepper*About 5-8 grinds of sea salt and 10 grinds of pepper 1/2 tsp. nutmeg Olive oil Place the butternut squash in the microwave on high for 12 minutes.* The squash was placed in the microwave early in the day so it would be cooled and ready to work with at dinner time.  Cooking time will depend on size and therefore you must check it with a fork after 12 minutes.  You want it soft enough to be able to scoop [...]
