Asparagus Onion Sweet Tater Soup

I was going back and forth wanting a Vitamix when my mother and sister told me they just loved their Cuisinart Blend and Cook Soup Maker.  I compared both, still torn with all the great reviews for the Vitamix.  But the Vitamix was SO expensive!  I couldn’t justify the purchase, not with all the other gadgets and appliances I have.  So when my birthday rolled around and my sister asked what I would like, I said I was thinking about the Cuisinart Blender that she and Mum had.  SURPRISE!  Guess what I got for my birthday?! My very first attempt [...]

Fat Burning Soup

I'm not a believer in “fast fat reducing” diets.  I'm a believer of “life style” diets that promote healthy eating of a variety of nutritious ingredients. A diet that works will be one that you stick to for the rest of your life. It should allow maintaining a healthy weight and life style and not produce yo-yo effects because of the limited caloric intake.  In addition, diets that rigidly restrict fat and carbohydrates promote sugar and fat cravings.  Those diets just don’t work. There may be some cases where the need for quick weight loss might be a medical requirement.  [...]

CEimB Mushroom Barley Soup

This week’s recipe from Craving Ellie is Beef and Mushroom Barley Soup.  Ted’s version has the beef and my version is simply Mushroom Barley Soup.  Both versions worked to warm us up on a cold winter night. Picked by Jennifer of The Rookie Baker.  Make sure to visit her site because she’s no “rookie”. There’s some awesome looking treats going on over there! Back to the soup…. I wasn’t crazy about the “beef” part of the soup but the recipe was something I hadn’t made before and different is always fun to try.  Ted was looking forward to having a [...]

CNYEats A Taste of Utica Lentil Soup

As I’m sitting here typing in this weeks Taste of Utica recipe from our book on page 33, I’m just wondering if your thoughts are going to be identical to mine when you read this one paragraph recipe.  The soup is posted by Toni (Leone) Guzski.  Here it is, as written in our book: Lentil Soup 1 bag of lentils: wash and drain put in pan and cover with water.  I change the water at least twice.  Add chopped onions, salt, and pepper.  Bring to a boil then lower to a simmer, add more water if needed, add a little [...]

CNYEats A Taste of Utica: Butter Bean Soup

This week we are making Butter Bean Soup.  The recipe was posted by Chris and can be found on page 25 of our book … This is a soup that is rich with vegetables of celery, carrots, onions, and tomatoes.  The large bean called a “Butter Bean”is used to add a smooth, starchy texture to the soup .  Butter beans only have a small amount of fat.  In a 1/2 cup serving there are five grams of fat per 100 calories.   They are a good source of iron, 8% of RDA in one serving.  1 1/2 cups celery, finely chopped 1 [...]
