Heart Run and Arugula–Bean Cakes

Saturday was the annual Heart Run and Walk event.  Ted and I once again gave our support.  I ran the 30K over rolling terrain which is great training for the Boston Marathon since there is the areas own version of “Heart Break Hill” at about the 16 mile point.  Ted ran the 10 mile and had a good run.  I ran slightly slower than marathon pace for about 8 miles. where I met up with Ted.  At this point, I suffered an “equipment malfunction” which turned that particular mile into a 12 minute mile – Boooo!   Since I held back [...]

FOFF Fontina and Spinach Florentine Baked Potatoes

I’d rather call this dish “Twice Baked Potatoes” but Carla Vavala gets a bit fancy and adds the Fontina cheese and a healthy dose of “Florentine”.  It won’t matter what you call it, it will be a crowd pleaser. 4 large baking potatoes (I used 1 sweet potato and 2 baking potatoes) 1 cup fresh spinach, steamed, drained and chopped (I simply chopped fresh baby spinach and added raw to the potatoes) 3 TBS butter (use olive oil instead and keep it healthy) 1/4 to 1/2 cup milk (skimmed or 1% would be your best choice) salt and pepper to [...]

CNYEats A Taste of Utica Collard Greens-Cabbage

Our recipe this week is on page 142 and was posted by Hj.  Now Hj recommends making this recipe with ham ends or ham hocks but there is no love for ham in our house, well maybe one of us and only on rare occasions, so I made the Collards and Cabbage without meat but flavored the cooking oil with meatless/vegetarian ham and bacon.  This was removed upon serving since Ted doesn’t like the meatless products. A Taste of Utica What to expect from this recipe?  A slightly sweet green dish, with good texture (no mushy greens) and mild taste [...]

The Plans and Braised Leek with Green Peppers and Oranges

The workout plan for the week has gone fairly well, except for the Tuesday glitch but those things happen especially the week after a wonderful vacation. So I never got my bike ride in but I did manage the 45 min. of Elliptical.  This is how it went. Wednesday was my mid week dedicated running day. Not too long, mileage wise since the half marathon is on Sunday. I ran just about 8 miles Thursday was a cross training day but the dog has to get in some exercise so after 45 min. on the elliptical, and 20 minutes of [...]

CEimB Creamed Spinach

I really had my doubts about this weeks recipe. I love raw spinach so most of the time, it’s uncooked in this house.  If I do choose to heat it, a simple 1-2 in the sauté pan works just fine.  I don’t like a glob of soggy spinach. The recipe for Ellie Krieger’s Creamed Spinach on the Food Network site looked exactly like a glob of green, soggy spinach. However, I didn’t want to disappoint Liz of Not So Skinny Kitchen who made the pick this week so I gave it a try.  What a success!  What a delightful dish!  [...]

CEimB: Baked Beans and Granny Smith Apple Slaw

This weeks recipe was chosen by Danica of Danica’s Daily.  Check out her blog for the original recipe.  As for the two of us at Apple Crumbles, this meal caused a bit of an upset the morning it was on schedule for dinner.  This is what happened. Ted:  “What’s for dinner tonight?”    Joanne:  “Baked Beans and Ham”. Ted”  “Ham?  What kind of ham?”   Joanne:  “You know…ham.”  Ted:  looking in the fridge….”Where is it? I don’t see it? Is it the big smoky kind with the bone in or is it the  sliced ham?”   Joanne:  “WHY DO YOU HAVE TO ASK?!”  [...]
