CNYEats A Taste of Utica Baileys Chocolate Chip Cheesecake

My version of Utica’s Bailey’s Chocolate Chip Cheesecake should be CheesePIE.  I didn’t  use the 10” spring-form pan, I used a 9” deep dish pie shell.  Since there was extra filling, I also used a chocolate graham cracker crumb crust.  The recipe is found on page 159 of the book A Taste of Utica and is posted by Jo Giacovelli.  Crust: 1/4 cup butter 2 TBS sugar 1/2 tsp vanilla 1/2 cup all purpose flour Preheat oven to 400 F.  Beat the butter until soft.  Gradually add sugar and beat until light and fluffy.  Add vanilla and stir in flour. Avocado Muffins with Ghirardelli Intense Dark Chocolate

The other day, I received a box of Ghirardelli chocolate. Be still my heart! This is part of the Foodbuzz Tastemaker program with Ghirardelli Intense Dark chocolates. Since so much chocolate was in the box, I decided to let two co workers taste test the chocolate. Sue on Midnight Reverie:  Smooth, intensely chocolate.  It takes a minute for full chocolate flavor to hit then the creamy chocolate taste, not bitter follows. Celebration Cake with Chocolate Covered Strawberries

An early Father's Day, a birthday, a day to celebrate family and friends, what other great reasons do we need to eat cake?!   As with most cakes, this cake was fun to make and fairly easy to assemble. This Strawberry Celebration Cake is two 10" round dark chocolate cakes.
