CEimB Spaghetti Frittata

Can’t say I was looking forward to this dish.  I just couldn’t wrap myself around the idea of adding spaghetti with my much loved frittata.   Maybe that kind of thinking sabotaged the recipe right from the start.  I thought about subbing rice for the pasta but I didn’t.  It was “go right by the book” (well, almost) this week.   So I stayed true to Ellie and made the dish as written with one exception:   I used diced tomatoes with green chilies in place of the marinara sauce because I didn’t have any marinara sauce.  A minor over sight while grocery [...]

Fast and Furious

Tonight had to be a meal that was ready and cleaned up by 7pm because Ted had a work "thing" and couldn't be dilly dallying with dinner dishes.  We had fish last night. He had beef the night before and was also eating pork left overs from the weekend throughout the week.  That means it's an EGG night!  :) Yahoo! Love eggs (well, 'Beaters that is). Post Election

What a day!  All about the election results. The history made. The future questions, problems, challenges. It's both exciting and scary.  Not being seers, we will just have to hang on to the positive aspirations of our hopes and dreams because it just won't accomplish anything living in fear.  I think Americans made the right choice.  Now lets move forward...Ted adds  "Change has come"...
