Sriracha Tuna Towers with Micro Greens and Guacamole

This recipe was based on a suggestion found at Weave Thousand Flavors. I changed it quite a bit but used the same “towering” concept.  We absolutely loved this dish. The Sriracha chili sauce can be replaced by your favorite hot sauce but keep in mind, nothing beats Sriracha. FOFF: Roast Sun Dried Tomato Fish

Chef Carla Vavala of Fusion of Food and Friends prepares a chicken recipe topped with my favorite, homemade sun dried tomato pesto.  Instead of using chicken, I made the dish for both Ted and myself therefore substituting with a nice white fish. Examples of white fish are, cod, haddock, sea bass, pollack, hake, sole, halibut, flounder and turbot. Eighteen Hour Return and Shrimp and Bean Tortillas

Our usual 14 hour road trip turned into 18 hours of frustration.  The dogs were great. The weather went from one extreme to another.  When we finally got home, unpacked, it was time to shake out those legs that were cramping from being in the car WAY too long. Take Time Off and Smoked Salmon Pizza

I took it easy this past weekend.  I ran 3.3 miles on Saturday and 6 on Sunday.  My legs are not quite back to where I need them to be for good training runs.  I’ll continue with just a few easy days of running until the tightness goes away. Seared Scallops with Shaved Fennel, Cucumber and Grapefruit

Seared, charred, down right burnt and completely collapsed The remains of Union Fork and Hoe. All buildings in the middle and to one side are gone. The fire is out but curious locals still go up and down our road and park in our lot. A Winner and Tuna Stuffed Peppers

It’s been a week of ups and downs.  Thursday ended on an “up” note because….
