Life doesn’t go as planned and Banana pineapple quick bread

As usual, I signed up to run not one but two fall marathons.  Marine Corp Marathon was an emotional experience with not one of my better finish times. A week before my next marathon, Space Coast in Florida, I’m feeling grumpy, burned out and not in a good place to run a marathon. It’s the week of Thanksgiving and our plans to enjoy the holiday and the race with family have changed so many times because of Luke, now 19 weeks old, because I don’t want to go, and because of another health issue of which we will find out [...]

Avocado Cream

Today’s long run didn’t go so well which wouldn’t be a problem except that it is my last long run before the Grandma’s Marathon on June 20.  It’s always nice for that last long run to be a confidence BUILDER not a confidence SQUASHER.  Just like race day, you never can tell if the body will be willing or unwilling to perform. I’ll give myself another chance with a slightly shorter distance next weekend and hope for the best.  In the meantime, this body was in the mood for comfort food but instead of diving into a pint of ice [...]

Country Crock Chewy Brown Sugar Oat Bars

First and foremost, this recipe is simple.  Only 5 ingredients and they all go from one pot into one pan.  Second, creative. Why? “Cause I created it.  A little pat on my own back.  Third, this recipe is versatile. Think of a different base other than rolled oats. What about granola? What about your favorite cereal? How about different toppings, other than chocolate?  This is a really easy, fun recipe using Country Crock Spread. Country Crock Nutrition Facts Butter Nutrition Facts Country Crock has less saturated fat than butter and contains ZERO trans fat per serving. No Cholesterol. No partially [...]

Banana Nu-Bread Pudding

With 1 quart of skim milk that was unopened and nearing expiration, what else could I make? Oh sure, some healthy soup but that’s not as much fun to make as a good old dessert that brings back childhood memories of Mom’s cooking.  Bread Pudding!   Using skim milk, an over ripe banana and some Nu-Naturals Simple Syrup and Nu-Naturals Cocoa Syrup, this is a reduced fat, reduced sugar version of one AWESOME dessert. *Don’t have any Nu-Naturals Stevia product, get it HERE or, simply double the sugar in the recipe to 1 cup. Serves 16 1 Quart Skim Milk 1 [...]
