Greek Layered Dip and Kushyfoot

Let’s start with food then move onto feet.  An odd progression I know.  In fact, maybe I should start with the foot “thing” and move on to the food that way, while preparing this fantastic dip, your feet will feel great. No. We’ll start with the food. Greek Layered Dip – maybe a lot of ingredients but very easy to put together. 10 oz original flavor hummus 1 1/4 cup Greek Style Thick yogurt, fat free or lite *Strain yogurt first. Simply put in cheese cloth and allow to strain liquid in a colander for about 30 minutes. 1 tsp [...]

Summer Sniffle and Microwave Mushroom Queso Fundido

Of all the times to come down with a cold! My parents are home for two weeks visiting, I’m getting into the pre-marathon phase training and it hits. The dreaded summer cold.  Sore throat for two days with itchy ears and eyes followed by left face syndrome.  If you don’t know what left face syndrome is, it’s when all cold symptoms migrate to one side of the face. This time, it was my left side.  The left eye watered, the left nostril tickled, caused sneezing then got plugged.  All left side symptoms.  Cut me in half and I’d feel fine…on [...]

Meatless: Smashed Chickpea and Sweet Pea Dip

This is Zoey just back from a run: and she’s out! She really gets a good workout, after all, she’s pulling 117 lbs. of ME! Dips for dunking’ dainty delightful delicacies. From “Meatless: The Kitchens of Martha Stewart Living” the following ideas were born.  It was a Sunday afternoon and dinner wasn’t going to be fancy so I decided to make a mish-mash of options or “pickeys” as you will, to munch on. The first dip is a chickpea, basil and radish dip.  It’s pretty basic and very easy to whip up in a food processor.  Although the original recipe [...]

Meatless Lentil Hummus with Natural Cashew Butter

We had a great idea for a weekend vacation in July:  Ted and I would volunteer to work the Lake Placid Ironman!  Great idea, right?! Well, it would have been if we had thought about it months ago.  We might be able to volunteer but we won’t have any place to stay.  Every hotel, B&B, and po-dunk Inn is booked from July 26 – July 28.  Oh well, it WAS a good idea.  On to bigger and better things…FOOD! Not chickpeas and tahini but lentils and nut butter. The cashew butter has a less distinct taste than peanut butter and [...]

FOFF Baked Crab Dip

This delicious hot dip isn’t dripping with grease and it doesn’t envelope you in guilty pleasure.  It DOES make your mouth water and, like potato chips, leaving you wanting more and more. This week’s recipe from Carla Vavala’s book Fusion of Food and Friends, found on page 17 reminds me of that OH SO TASTY spinach artichoke dip I used to have so often in chain restaurants while watching football games at the bar.  Yes, I confess, once a bar rat, I used to indulge in the fatty and delicious, not so nutritionally packed appetizers.  But they were good and so [...]

FOFF Mucho Loco Taco Dip

This weeks Fusion of Food and Friends (aka FOFF) recipe is found on page 12 of Carla Vavala’s book The recipe is by Mark Palazzo.  Mark certainly knows how to whip up an awesome dip!  Mucho GOOD! Mark’s recipe was made with ground beef and full fat options. If you choose to add ground beef, cook it in a skillet until brown.  You will also need a package of taco seasoning if adding meat. Once the meat is brown, add the seasoning and as much water as required by package directions. After this, continue with the rest of the assembly [...]
