Chocolate Zucchini Bread with Dark Sweet Cherries

‘Tis the season for zucchini.  We were given squash after squash from co workers.  I’ve been making my traditional pineapple zucchini bread for sweets and on the savory side, I’ve made stuffed zucchini with tuna, salads with fresh zucchini, and zucchini patties.  We’re enjoying every thing zucchini. Today, I followed the pineapple zucchini bread recipe found here, but omitted pineapple for cherries and added chocolate. Lots of chocolate.  A sure crowd pleaser. Ingredients: 1 1/4 cup canola oil 2 cups sugar 2 tsp vanilla extract 3 eggs 3 cups flour 3 TBS unsweetened dark cocoa powder 2 tsp baking soda [...]

What Else and CNYEats Whiskey Cookies

We’re still under kitchen construction but coming to the point where money is going out at a steady pace.  It was to be expected that during this “open wallet” period that something else should come up.  What would that be? The dryer of course! It was cold outside with no clothes line nor a place to hang wet wash without it touching the ground or getting dusty.  The next best thing, since it wasn’t dripping wet, was around the top of the stairs.  No very pretty but it sure made the house smell nice.  We hope the service charge and [...]

CNYEats A Taste of Utica Italian Chocolate Cookies

Saturday I ran my longest long run before Air Force Marathon on September 15th.  It was 22 miles in perfect weather without any major aches or pains.  Shane and I ran a slow 6 miles to start the morning then I continued on, incorporating some hefty inclines in my run.  The steepest part of the hills turned into a run/walk effort. 22.02 miles with a moving pace of 9:58.  Slow but within my training pace range.  I had to stop on Sessions Road. It was such a wonderful down hill with a great view and that wonderful fresh, “cow natural” [...]

Mile One Wall and Chocolate Saint-Honore

Oh Heck! Those days are just going to happen.  I’m not sure I’ve ever hit the wall while running a marathon before but I’m pretty sure I hit that infamous wall at mile 1 today.  Yes, mile 1.  The weather was colder and it was snowing with winds about 15 mph when I took Shane. I ran 4 miles and felt so tired with a complete lack of energy.  How was I going to get through 17 miles today?  Well, I did.  It wasn’t pretty, it was down right awful. I gave into the fatigue and walked.  I tried to [...]

Not Amused and Chocolate with Francois Rice Pudding with Sautéed Cherries

Only Ted and I are amused by Shane’s new toys. When he chews through one, we buy another. This past weekend, we picked up two new squeaky toys. They are LOUD! My parents let out an “OH NO!” Every time he starts to chew and squeak.  As Ted and I sit in the other room, we look at each other and share a secret snicker.  It really can be a torturous noise to the ears.  Forget watching television, you won’t hear it.  He’s our boy! Chocolate with Francois:  Chocolate Rice Pudding with Sautéed Cherries and Cream. Last month I missed [...]
