chocolate chip mint cookies

I’m on a mission to use all that mint in our garden.  We planted flowers and if I allow that mint to grow and grow, we won’t see the flowers.  It’s mint on steroids! I used to love those Girl Scout cookies called Thin Mints so I decided to see what I could do with what ingredients I could find without having to rummage through boxes (our kitchen is not back together yet).  The following recipe is the result.
