Union Square: Stuffed Chicken Breasts

"Your body will argue that there is no justifiable reason to continue.  Your only recourse is to call on your spirit, which fortunately functions independently of logic."  - Tim Noakes Another snow storm is expected to hit our neck of the woods.  More snow… UGH!  Ted said to me this morning “If we have another winter like this one, we’re moving!”. We’re in the toughest month of the year in my book: February.  It’s cold, no more football, serious training month for Spring marathons, it’s a tough month! But we like tough right? I mean, that’s WHY we challenge ourselves. [...]

Agreeable Life and FOFF Quick Chicken Tetrazzini

South Carolina agrees with me.  I don’t want to rush anything but…when’s retirement?! When I visit my parents, walks to the marina in Heritage Plantation are a must. Sitting on the docks and enjoying the warm air. Always looking for the alligators in the local water and sometimes seeing them. And don’t forget the turtles keeping just a short distance between him/her and the gator. Pasta Recipe Page 70, Fusion of Food and Friends by Carla Vavala offers a quick, easy and tasty dish for all chicken and turkey eaters. As reported by my number one chicken lover, "it's got [...]

Doesn’t Feel Like Tapering and FOFF Chimichurri Chicken

When you begin a two or three week taper as the marathon approaches, there’s a tendency to get antsy, begin to worry about your training, the desire to keep on keeping on.  During this taper period for my last 6 marathons, that’s exactly how I’ve felt. But this time it’s different.  This week my feet hurt and I’m tired.  Sure, my training runs are shorter in time and miles so overall miles will be less but my body wants time off completely before the big day in Boston.  Next week I’m going to super taper.  I’ll take every other day [...]

FOFF Walnut Crusted Chicken

Looks like we got lucky here in upstate since that nasty winter storm will barely touch our area. I’m tired of cold winter snow.  The dogs love it but me, not so much. I’m looking forward to leaving the house in a matter of 3 minutes when I get ready for a run.  Right now, it takes me 10 minutes to put on all that wintery protection. Maybe it should be considered part of my workout?  I know spring is just around the corner because we might even hit 50 degrees on Sunday.  Good news for me, bad news for [...]

Someone’s Listening and FOFF Tequila Lime Chicken

I was feeling down and out and trying to decide whether my malaise was due to recent events regarding tummy trouble, the cold winter weather, or thoroughly depressed because I missed an event I had my heart set on for years, The Goofy Challenge.  The thoughts of this years big birthday loomed heavy on my mind and certainly didn’t do anything to make matters better. The dogs demanded attention, having no pity on the sick, wounded or depressed, I took them on a walk down the road.  It was cold, gray, and snowy outside. Everything seemed so gloomy.  Thoughts went [...]

FOFF Y-Cinta Chicken and Squash Curry

First, I have to brag that I am getting my monthly massage this weekend.  YAY! I SOOO look forward to those invigorating (sometimes painful) deep tissue massage sessions that work out all the kinks I’ve put into my tissues and muscles.  If you live in the area, check out my latest Examiner article on the best place in town to get a massage. They even won an award! There is also a recipe for a healthy, antioxidant, hydrating Pear Ginger Water. The Chicken sCOOP of the week: Not quite the curry flavor I’m used to. Carla Vavala uses Red curry [...]
