Bread Pudding

Banana Custard with Cinnamon Raisin Bread

Homemade cinnamon raisin bread with overripe bananas that seem to accumulate in our house were turned into a delicious, disappearing Banana Custard. When eaten warm, right from the oven, the texture is light and pillowy.  Once cooled, it’s simply a sweet, custardy delight. Can’t go wrong. Serves 12 – 14 Preheat the oven to 350 F.  Use a non stick 13 x 9 sheet cake pan. 1/2 a loaf of store bought cinnamon raisin bread or a small homemade loaf, torn into pieces 4 over ripe bananas 3/4 cup sugar 1 tsp vanilla extract 1/2 tsp cinnamon 1/2 tsp salt [...]

Banana Nu-Bread Pudding

With 1 quart of skim milk that was unopened and nearing expiration, what else could I make? Oh sure, some healthy soup but that’s not as much fun to make as a good old dessert that brings back childhood memories of Mom’s cooking.  Bread Pudding!   Using skim milk, an over ripe banana and some Nu-Naturals Simple Syrup and Nu-Naturals Cocoa Syrup, this is a reduced fat, reduced sugar version of one AWESOME dessert. *Don’t have any Nu-Naturals Stevia product, get it HERE or, simply double the sugar in the recipe to 1 cup. Serves 16 1 Quart Skim Milk 1 [...]

Apple Charlotte: An Irresistible British Pudding

This month we are featuring Great Britain at the site of My Kitchen My World.  There were SO many dishes I wanted to make, after all, my parents are English and I was raised on some wonderful, traditional English meals. After much hemming and hawing, I decided to make use of the apple bounty, abundant this time of year in upstate New York.  The recipe is very easy and also known as Brown Betty.  Fattening, yes. Difficult, no.  Serves 6 – 8 1 cup dark brown sugar cinnamon – you will be sprinkling this on as you work the recipe [...]

Not Quite Yet and Microwave Banana Bread Pudding

The empty, unfinished room in the house has been upgraded to an unfinished floor, temporary sink and 3/4 finished cabinetry.  It’s getting old. We want our kitchen back. This has certainly been an exercise in patience. What else? Ted hurt his back. Shane hurt his shoulder.  Zoey and I are fine.  I’ve been reading running blogs, reading marathon recaps, and researching potential future marathons of interest.  All in an attempt to get motivated for upcoming marathon training.  As for running, it’s been a month off training to allow the hip to heal.  I went to a chiropractor for three adjustments.  [...]

What keeps us going and Banana Stuffed French Toast Bake

We’re all different.  What motivates one person does absolutely nothing for another.  When you do any sport for endurance and you’re out there training for hours at a time alone.  An awful lot of thoughts go through your mind.  Saturday’s run was a long run and it took me a long time. I was in no hurry.  No plans for the day so I could just jog along and put my time on the road.  Those are the runs I like. No time goals. No need to get home to be ready for an appointment or work, just run with [...]
