FOFF Slow Cooker Garbanzo Bean Stew

Magical beans...don't get scared! If you eat these healthy little beauties often, your digestive system will adapt and you're subscription to "Bean-O" will be cancelled. Don't pass up all the benefits of beans including slow digesting carbohydrates, tons of fiber, antioxidants (important this time of year) and healthy protein. So much nutrition in such a little, low fat package. And so I present: THE BEAN. .... Whoops! Wrong "Bean".  That’s Zoe-Bean.  We want THIS bean: The Garbanzo Bean. We’ll be using it in the recipe from Fusion of Food and Friends.  But first, it’s important to understand why beans are [...]

CNYEats A Taste of Utica Lupini Beans

I couldn’t find lupini beans when I shopped.  I decided to substitute fava beans and lima beans. On page 143 of our book, A Taste of Utica, you’ll find two recipes for preparing lupini beans. The “Joes” were served 3 different ways. The one above was my mother’s: Bun and Sloppy Joe Mix, the basic Joe. I made some small changes to Ellie’s recipe.  For the original recipe, go to Chaya’s blog or find it here. No Ground Beef. I used 1 TBS olive oil to cook the onion. No jalapeno pepper (Mum and Dad can’t [...]

That’s a Wrap

Exercise in review: How’s your running, cross training, walking, biking, swimming going?  I left out skiing although the weather this past week certainly leaves that as an option in many places.  As for me, all running goals have been met except for the 60 minute run Saturday. I’m looking forward to that one even though the weather is suppose to be back into the teens. Oh Thank You NY Weather!!!      Shane will be ready to get back on his running “paws” and hit the road.  Yay Shane!  Not sure where we’ll be running.  If it isn’t too muddy, we [...]
