Easy Apple Bread with Cherry Vanilla NuStevia

Before getting to the FAN-TAB-ULOUS recipe below, I have to share this running quote with you from Gibson’s Daily Running Quotes.  It’s so important to get words of inspiration like this to beginning runners.  "If you are capable of running, then you are cut out to be a runner. Don't think that you aren't cut out to be a runner. Don't let other people convince you of that. Ignore them. Don't waste your time wondering if you got the right gifts ...from the gene genie to run as fast as you want to run. Don't wallow in doubt about exactly [...]

Weighty Matters and Gluten Free Sugar Free Banana Nut Breads

From “1001 Pearls of Runners Wisdom” Quote by Don Kardong If you run 100 miles a week, you can eat anything you want.  -Why? Because a) you’ll burn all the calories you consume, b) you deserve it; and c) you’ll be injured soon and back on a restricted diet anyway. Let’s not get injured and lets not get “weighty”.  Nut flours paired with banana and a touch of cinnamon. The house smells great and the little banana nut breads taste superb.  These breads are baked small because the batter is very dense, in fact it will hold it’s form so [...]

Running Rain Shirt and Cranberry Banana Bread

It’s been raining for two days.  I sneaked out for a run this morning since it wasn’t pouring as the forecast had predicted. It was just a drippy, wet morning.  The kind of morning when there is moisture in the air and you have to keep your eyes on the ground otherwise you’ll drown in a huge puddle.  The previous evening, after looking at the forecast, I got to thinking that a running rain shirt, not a jacket, should be invented.  One that can be worn in pouring rain to keep the chill out but not insulate while running.   I [...]

CNYEats A Taste of Utica Banana Bread

It is very rare that I don’t have a few bananas in the freezer.  I keep them just for baking.  Banana’s can be used as a substitute for fat or oil in a recipe if you need to reduce fats in your diet.  They also make super pancakes, cookies, or bread.  The best feature about bananas in baking is that the next day, the taste is even better. Banana Bread, page 57 in our book A Taste of Utica  Posted by Rainie Piccione, this is Loraine Ostrander Piccione’s recipe and it’s a good one.   Note:  I had three over [...]

Banana Therapy

A change in plans.  I’m following a schedule to increase my running miles so I might be able to do a marathon at some point this year.  Currently, I am going into week 13 which would be my longest run yet, 18 miles.  BUT… I’ve entered a couple of races.  On Saturday April 3rd, I’m running the 23rd annual Fort to Fort, a 10K.  On the 11th I’m running my first 1/2 marathon 2 hours away in Ithaca, The Skunk Cabbage Classic.  Then I’m hopping into the car and going to S.C for a visit with the family.  Part of [...]
